Almost exactly what I was going to suggest! - Ricotta and spinach parcels. Mix an equal amount of finely chopped spinach with ricotta cheese, season with salt & pepper, then make parcels of it with filo pastry and bake until pastry is golden brown.0

wilted them mixed with soft cheese,use to top a bagel or a tortilla and put under the grill
or on a pizza ,in a lasagne,in a creamy pasta sauce,in a pie,in a suet roll,stuffed inside a chicken breast

Sorry if this has been asked before. I've been trawling through the search system and can't find the answer.
I've been going through my fridge and have a bag of baby spinach about to 'turn' and was wondering whether it was possible to make soup out of it.
Has anyone any advice or got any recipes (esp. pressure cooker ones).
I'll be so happy if I can save it and make a lunch or two for next week instead of feeding it to my composter. Thanks.0 -

Well, I think spinach soup is fab, so I'm replying because nobody else has yet... (as opposed to because I am a fantastic chef!). Try the recipe below:

I'm sure it will work with baby spinach (it will probably be sweeter and all the nicer for the fact that it is "baby" spinach!).

P.S. I have to admit though, I love my spinach in a spinach and chickpea curry - its my favourite way to eat spinach. Might be worth some consideration...?!0 -
You can make soup from any vegetable. Any meat too for that matter.0
