  • Thank you for your replies! Sorry for not getting back sooner - I had a v. busy weekend and have only just been able to get on the computer.
    There are some wonderful recipes mentioned and I have my spinach bubbling away as we speak. I didn't think of trying the BBC website for ideas, so I have now bookmarked them for future reference as I always seem to have a few odds and ends that need using up and lack inspiration at times. Thanks all.

    :confused: I have an unopened bag of baby spinach in the fridge, the use by date was yesterday, it looks fine, what can I do with it?

    I know it's a long shot, but anyhelp would be good.

  • Spinach soup. Saute an onion and a couple of potatos diced in a little butter for about 10 mins. Add stock. Add spinach. Cook till potatos are soft. Whizz up. Tastes great.

    I freeze bags of fresh spinach and crunch it all into little bits when it is frozen. I then sprinkle liberal amounts over curries and give it a quick stir a minute or so before I serve it. Last ages.

    Its lovely as a salad veg or wilted and poached egg on top, perhaps a bit of cheese or cheese sauce as well - yum

  • you could warm up a tin of black eye beans and then put the whole lot of spinach in it, drain, add olive oil and serve as a warm salad with crusty bread. Healthy and tasty!

  • Or you could simply heat some butter in a pan, add the spinach and some salt, stir, cover and cook for about 30 seconds, add another knob of butter, stir, cover, and cook for another 30 seconds. Not very healthy but absoutle delicious as a side veg with either fish, chicken or turkey.
  • I make a veggie lasagne - layer of tomato sauce (chopped tom, onion, garlic, herbs, maybe pepper of mushrooms cooked in a pan) - layer of lasagne sheet - then very thick layer of raw spinach (it cooks down to nothing) - repeat then top with a layer of cheesey sauce. Yum! Even my hubbie lkkes this and he hates lasagne but make sure your tom sauce isnt too watery.

    Like Oakdale_Minx, I freeze mine into portion sizes wrapped in cling film intothe freezer, and use when needed for pasta or curry
