THanks for all your suggestions.. for some reason some of your thanks buttons wouldn't work, but I have thanked you all.
I think I might have to freeze some of it, I won't use it all today. The kids will eat it, but not in large quantities.
I like the idea of the soup, although my eldest hates the word soup! If it's a pasta sauce it's fine, if it's soup.. won't touch it!
Any ideas for a pasta sauce that is quick and uses minimal ingredients?
I know I could probably throw things together but I'm not too good in that way.
I like to follow instructions.. lol.

Wash it thoroughly, then saute it off with a clove of garlic or two, and stir in a pot of cream cheese/ricotta cheese, and stir through pasta. Super fast and really tasty!2015 comp wins - £370.25

Spinach veggie lasange or make a pasta frittatta with spinach and cheese (We had last night - cook spinach for a few mins in it's own washing-water, chop small, whisk 4 eggs and some cheese, add everything to cooked pasta. Fry in frying pan, then sprinkle in cheese and grill. LAla!)0

I had the same problem the other day after intending to use it for a salad. I made mine into a pasta dish with a pot of reduced single cream, toasted pine nuts, salt and pepper and some grated cheddar stirred into the cream. If you're feeling really posh, you could add a splash of dry white wine to the cream before adding the cheese. Bought this from lidl half price but only ever had it on Dr.Oetker pizzas before!

Yep, that's how I like it too, butter, lemon, black pepper - another good alternative too if you don't have a lemon handy is to grate in some nutmeg (only a little though!). According to that truth about food prog, spinach is v.good for your eyes too (lutein) so eat lots!

I stuff spinach into lasagne sheets with parmesan, bacon, onions etc. Cover the lot in a cheese sauce and bake. Nice vegetarian lasagne/canneloni.
That or I have it with pasta in a blue cheese sauce with bacon and walnuts.We must all suffer one of two things: the pain of discipline or the pain of regret and disappointment0
