mmmm lucky you Juicy Tube !
My mum always made a spinach and ricotta pie,which was just basically layers of the two. She always had to use loads of spinach as it shrinks alot when cooked

Hi bonnie,
Wash it and put it into a saucepan, put in a small knob of butter (optional). There's no need to add any water, just put the lid on and cook on high for 4-5minutes.

It's lovely added to cooked lentils - just wash and add it and cook until it wilts. Very tasty and very healthy too!0

I have been given a bagful of spinach.
Unfortunately, I know nothing about spinach.:rolleyes:
How to preserve it? Freeze it or else?
I tried it in a sandwich, but the leaves are not as tender as other salad leaves.
Any ideas what I can do with it, please?

Lucky you for having it, I love the stuff.
As for preserving it, I think the best way is to cook it into something first, if it was just frozen it would be a pile of green slime when defrosted.
Might I suggest a nice spinach and ricotta lasagne, steamed spinach with nutmeg as a side vegetable, linguine with spinach and prawns with a creamy sauce... the list is endless really.
The key with it is not to overcook, it should be thrown in right at the end, so it just wilts and doesn't go too soggy.Softstuff- Officially better than 0070 -

I won't freeze it now, but .... I have two limiting factors:
1. pinach and ricotta lasagne and spanakopita sounds way too complicated for a cook like me. I can just about to chop veg into a salad...
2. My oven does not work. Kids pulled out a rubber seal ages ago, and we took off all the handles when they started walking. So I only have hob at my disposal.
Oh, well...
Has anybody got a recipe for a spinach soup or something else (easy level, please)
