    Cannot find anything in the recipe thread, so I am looking for some ideas from you..x

    I have a huge bag of cooking spinach and need some inspiration as what to do with it!

    Any thoughts?

  • Sausage & Pasta Bake

    1 pack of sausages (remove the skins and chop into little pieces)
    1 onion chopped
    1 carrot grated
    3 tbsp tomato puree
    250ml red wine
    500ml veg stock (from a cube)
    50g butter
    50g flour
    1 pint milk
    grated nutmeg
    500g pasta
    1 bag spinach

    Heat some oil in a pan, and add the chopped sausages and onions - cook till the sausages brown slightly. Add the carrot, tom puree, red wine and stock and bring to the boil - then simmer for 15 mins. Cook the pasta according to pack instructions, meanwhile in another pan add the butter, flour and milk and heat (stirring all the time) till it thickens - when it does add some grated nutmeg and simmer for 2 mins. When the pasta has cooked add the bag of spinach to the water and drain. In a lasagne dish (or something similar) add half of the pasta, then pour over the sausage mixture, add the rest of the pasta, pour over the white sauce and grate some cheese on the top. Cook in the oven till browned (about 15 mins on 190C).

    We had this last night and it was yummy and the kids eat the hidden veg!

    I stir it into curries and stews.

    Make it into a souffle,or make creamed spinach-bechamel+spinach and use to fill pancakes.What about spanakopitta-spinach,feta pie?

    The thing with a really large bag of spinach is that when its cooked you end up with about one handful of spinach ;)

    My two favorites uses for spinach are with feta in a greek pie or added to lentils (spiced brown ones, cooked with onion, garlic and lots of cummin), with a pot of yoghurt added when you've cooked it really dry.

    Oh - goes really well with lamb too.
  • Cheese and Spinach Pie. Or Cheese and Spinach filo pastry parcels. Or bung it all in a very nice spinach and potatoe curry - I'm feeling hungry now!
  • Mix it with yoghourt and use it in a lasagne - a layer of s & y, layer of lasagne, layer of tomatoey sauce (tin of toms with onions and garlic). Finish with s &y and top with cheese. YUM!!! :p
