So today i have bought carrot and butternut squash, beef stock, onion and other various bits, i have no idea how i go about making a soup? I need step by step directions - if anyone is willing to write them down for me, i would be so grateful and thank you xxx
I would
1) finely slice or chop up an onion
2)melt a little butter or a drop of oil in a large saucepan and fry the onions till they go clearish - take off heat. ( few mins on low hob)
3) peel and chop carrots. Peel and chop butternut squash to the sort of size you would want to see on your spoon.
4) Drop them into the pan and again heat for a bit. Add a bit of water if it starts to stick.
5) make up stock - veg is prob best but any would do. Make sure it doesnt taste too salty some stock cubes can.Add more water.
6) pour stock in, till it looks about the right amount. Simmer ( small bubbles) until the veg is soft when you touch it with fork.
Take out half of it and blend in blender, then pour back in and heat. If you wanted it smooth blend all of it.
(A little honey in with the carrots and squash before the stock might also be nice, but careful not to burn it!)

Ahh thats ace, thanks for your replys. I shall deffo be getting myself some veg stock and making a soup tomorrow. Many thanks for your ideas x0

I do a nice tomato and pepper soup using stock, passata or a can of tomatoes, peppers, onions, herbs and spices to taste (lots of paprika and hot spices are good for that warm feeling). I just bung them all in a pan, stick it on a low heat and leave it for a few hours!!Starting weight 17st 4lb - weight now 15st 2lbs

My biggest achievement this year has been to make 'good' soup. I'm a good cook and can make most things off the top of my head without having to follow a recipe but for soup until recently thats not been the case. I can follow a soup recipe and it's good but trying to follow my Mums, throw the chicken carcass and some veg in a pan and make a soup method, mine has always tasted like veg boiled in water. I think the key is seasoning, add three times as much as you think you should and keep tasting it. I also cook it for ages so the veg are really soft and the flavours all come together. How made soup ois the best and to be honest can be made with all sorts.
3 of my favourites:
Pea and mint - cook a pack (half a kilo) of peas and add some fresh mint (chopped handful) add stock (veg or chicken) and then blitz with a hand blender. It really quick.
Nigella's butternt and sweet potato soup - roast chopped up sweet pot and squash. I fry off onion and add cumin. Add the roasted veg and veg / chick stock and blitz again.
Potato & leek - great in winter.

One trick with soup - is to fry the onions on a low heat for longer; past the stage of being clear but not actually burnt. It really really [really] adds tons of flavour. And as a veggie who makes ALOT of soups - this would be my one top tip. I start all my soups off this way and it pays dividends.
Once they are cooked; then add whatever veg and seasonings, stock and simmer - then blitz. My hand blender died a few weeks back so I've taken to mashing it for a chunkier feel.
Second tip; if you have any celery - add either a few leaves, or one stick - when you are frying the onions.
In fact; you've inspired me to make a pea soup today.0
