  • I've made two version of butternut-squash soup in the last couple of weeks: the first one was with a litre of tomato juice which was hanging around in the fridge well past its sell-by date and the other with a carton of passata bought when it was on offer at the supermarket. To both I added two tins of mixed beans (haricot, kidney and borlotti, I think) in addition to sweating off chopped onion and celery. The killer ingredient was a couple of teaspoons of pesto sauce. Actually, this is great in any kind of soup with tomatoes in.

    I've been on a bit of a soup-making craze recently: to date I have made the aforementioned butternut-squash, cauliflower, root veggies with broth-mix (barley, lentils and split peas) and last night made my first ever mushroom soup which was so easy a three year-old child could do a decent job of it and it's really, really tasty and I'll be having that for my lunch tomorrow. I just have a look in the supermarket and buy whatever it is that's on special offer or reduced to clear and into soup it's made.

    I would love the mushroom soup recipe please if you dont mind as so far Ive only made the standard type veg soups (carrots/BNS/onions, etx mix).

    I make alot of soup too, i find it's easiest to gently sweat off an onion in butter then add any chopped veg you like, cover with stock (1-2 cubes or i like those little stock pots when they BOGOF), season then bring to the boil till veg is soft. I blitz with my hand blender or mash with a potato masher for a more 'rustic' look.

    I also recently discovered that cleaned out plastic milk bottles are perfect for freezing soup in. I dont know why i never thought of it before.

    8 ounces (I used 350 grammes as that's all I had) of mushrooms cut into small pieces
    2 spring onions chopped (I didn't have any so used a small red onion finely chopped)
    300 mls/5 fluid ounces/quarter of a pint of vegetable stock (I used a veg. Oxo cube)
    300 mls of milk.

    Sweat off the onion and mushrooms in about an ounce of butter for 3 minutes or so.
    Add the stock and milk.
    Bring to the boil and simmer very gently for about 20 minutes.
    Cool slightly then blitz the mixture with a hand-blender thingy.
    Make a roux in another pan with a heaped tablespoon of flour and about half an ounce of butter.
    Gradually add the blended soup to the roux just like you would when making a white sauce.
    Bring to the boil and simmer for about 3 or 4 minutes.
    Taste, then season with salt and pepper and it's done.
    If you're feeling very lavish you can add some cream when serving but it's fine without.

    Like I said, a kid could do this blindfolded.

  • Here is my favourite soup recipe. I never tire of it and make it at least once a week:

    RED PEPPER AND CREAM CHEESE SOUP

    2 red peppers, de-seeded and roughly chopped
    1 large onion, chopped
    2 celery stalks, chopped
    1 large carrot, chopped
    1 tablespoon paprika
    2 veg stock cubes dissolved in 1 pint of water
    7 oz (200 gram) tub low-fat garlic & herb cheese (I use Morrisons own)

    Put the onion, red pepper, celery and carrot in a pan and sweat for 5 minutes. Add paprika and cook gently, stirring, for 1 minute. Add the veg stock and simmer 30/40 mins. Liquidise till smooth, then add the soft cheese and blend for a further 15 secs. Season to taste. Delicious!

  • Cor, that red-pepper soup sounds lush. I'm going to give that one a try if I can get peppers on special offer. Have you tried oven-roasting the peppers first? I think that might be good, too

    It's got to be a cheap month this month - so it's boiled ham plus pea & ham soup from the cooking water and a box of dried peas this weekend - and as far into next week as I can get.
    The acquisition of wealth is no longer the driving force in my life. :)
  • I usually do this one which is so quick and easy

    1 Buttenut Squash
    3 sweet potatoes
    roasted in the oven with 2 cloves of garlic till they are lovely and soft then I whizz them down with Veg stock and some curry powder its nice and spicy for a frezzing cold day like today :)

    No I haven't tried roasting first but it's an idea. By the way both Morrisons and Sainsbury's are doing Philadelphia cheese half price just now so using that instead of Morrisons own!

    If you have an Aldi nearby they have 3 mixed peppers in their super 6 this week at 59p. I always stock up when they're on offer and freeze them. HTH

    Know the feeling! I have the stock in the freezer from a large joint of ham I boiled at Xmas - that will be coming out soon to make pea and ham soup!
