I bought an enormous block of Stilton reduced to £1.50 in the Co-op yesterday. Guess what soups I'll be making to freeze this weekend! Celery & Stilton, Broccoli & Stilton, Cauliflower & Stilton .... I wrote this recipe down years ago (can't remember where from, a magazine probably) and never got around to making it until this week. We really liked it so thought I'd share it. Cheap, filling & pretty healthy on the whole. It serves four. We had it with a piece of home-made granary bread & found we didn't need anything else. Felt really proud to be using our homegrown butternut squash....we only had one...but it went to good use!
3 cloves of garlic, crushed
1 tblspn olive oil
1 onion
2 rashers smoked bacon
1 butternut squash (about 1 & a half lbs)
1 medium potato
1 tspn chopped dried rosemary
1 tspn dried basil
1 and a half pints vegetable stock (I use Marogold powder)
1 400g can of borlotti beans, drained (or cannelini or butterbeans)

Chop the onion. Peel & de-seed the butternut & cut into cubes. Peel & cube the potato. Chop the bacon into small pieces. Heat oil in large pan, add onion, garlic & bacon & cook for 10 mins until softening & just starting to turn golden. Stir in the potato & butternut cubes. Add herbs & stock. Bring to the boil, turn heat down & cover & simmer for 25 mins. Add the drained beans & season to taste. I only add the merest pinch of salt as the bacon is already quite salty, but I do grind in a good bit of black pepper at this stage. Cook gently for another 10 mins before serving with a nice chunky slice of bread.

I made a nice soup for my dinner today. I was supposed to be making Cullun Skink, but it was a bit of a faff, so I adapted the recipe. I'm not great at quanties and just chuck stuff in. This made enough for two, but I ate it all myself, cos I'm greedy!
1 onion
Some mushrooms
one potato
smoked haddock
veg stock
Milk
Fry the onion, mushrooms and diced potatoes, for about 15 mins, or until you get bored. Pour in milk and add stock. Add flaked fish (I added it raw, but it was a pain to separate it from the skin). simmer for half an hour or so.
I didn't add any seasoning; the fish has quite a strong flavour, so I didn't think it needed it.
As an aside, does anyone have a nice chickpea curry recipe, using coconut? I saw a recipe I liked, bought some chickpeas and coconut cream and now (naturally) can't find the recipe anywhere.0 -
That sounds lovely and good timing too! I was a butternut squash last night. Normally I do curried butternutsquash soup, but this sounds delicious so will give it a try in the slow cooker.

Hi all, I want to make some soup for my and DH's lunch for the next few days, trying to be MSE an all:T I have the following: Cauliflower, broccoli, carrots, peas, sweetcorn, swede, leeks, potatoes, onions, garlic, mixed peppers and a soup mix from julian greaves, which has a mixture of various lentils, split peas and porridge oats!?! oh and I also have some kidney beans. Plus i have some Gorgonzola that ran out on last monday, not sure if it goes off or not:o need the confused smiley. So anyhoo my question to all you knowledgable people is what soup/s can I make with this lot?
I look forward to seeing what y'all come up with and thank you in advance.

we have started have soup day every monday - tomorrow we're having Leek and Potato - i made and froze it on Thursday and it was the first time I made it and it tastes blooming gorgeous! I really can't wait until tomorrow!

This is my own made up recipe that never comes out the same twice.......
180g lentils or thereabouts, then chop up the following veg
1 largish onion
3 carrots
1 potato
handful of chopped mixed peppers (I use the frozen one now0
a mushroom if you have on.
A bit of shredded cabbage too if you have some, about half cupful.
1 or 2 cloves of garlic (I use dried as I'm a tightwad lol)
Make up some stock with a couple of chicken oxos, and a teaspoon of dried ginger.
Just chuck it in a big pan, boil then simmer for half an hour, adding salt and pepper if you think it needs it, then liquidise and it's delicious!
