I make a big batch of soup most each weeks. DH and I take it to work each day for lunch. Then I always freeze a portion or two for the weeks I haven't made any. I can't get the kids to eat soup though. They are 9 and 12.Wendy0

Made a big pan of tattie soup on Sunday and it was delicious. Going to have some lentil today. Can't beat a bowl of homemade soup.If I had known then what I know now . . .

Anyone got a recipe for celeriac and leek soup? I keep seeing the ready made version in the supermarket and thinking "1.99 for that? I could make that for half the price at home!" I just need to find out how!0

My faves are:
* Hot & sour
* Tom yam
* Lentil with garlic & tomato
* Tomato
* Minestrone
* Curried chickpea with coconut milk

Adding in curry powder works well to take away some of the sweetness.
Edit: It was:-
1 onion gently fried
then added:
3 large parsnips peeled and chopped fairly small (as OH likes it blended later)
2 potatoes chopped
some thyme
some curry powder to taste
2 pints of water
Boiled till veg was really soft then mashed it (as I was too lazy to wash the blender!!)

I am sure others do this, but I slow cook all meat bones overnight in my slow cooker (just covered with water) and always have lovely stock for soup. It is much nicer than stock cubes, and doesn't really cost anything (the fresh stock in Sainsburys is nice too, but REALLY expensive!) You can easily freeze it in margarine tubs or whatever. Any bones will do, but use all the same sort in one batch (all lamb, chicken, game etc at one time), but you can save them up in the freezer beforehand until you get enough of one sort if you like. When it is done, strain it, and if you have cats or dogs like me, they really like the little bits of meat that come off the bones, to put in their dinner. My little dog is watching me anxiously as she knows I am just about to strain off some turkey stock waiting in the slow cooker pot now.0

I used mild curry powder and just sprinkled it in and kept tasting it :rolleyes: - didn't want it to taste too much of curry but it just took the sweetness away from the parsnips.
Next time, I will add a little bit more though so you can taste it a bit moreworking on clearing the clutterDo I want the stuff or the space?0 -
