  • I love homemade soup.

    I make 'bottom of the fridge' soup. Basically any veg thats on its way out I make into soup. Dilicious! :D

    We have just got in to making home made soups and I do at least one batch of soup at the weekend, sometimes two. Last weeks batches were leek and potato (at H's request) and roasted pepper and tomato. Both were fab.

    I freeze at least half of it in portion sizes and we have it for lunch, which is lovely at this time of year when my office is freezing!

    I think this weekend I will do parsnip.

    I tried this earlier in the week and it was horrible! :( I had quite a lot all the following - onion, carrots, swede, green beans and peas, added 2 pints chic stock and simmered for 40 mins. Couldn't eat it, was really disappointed. LOVE h/m soup but seems I have to stick to following recipes! :rolleyes:

    What was it you didn't like? Did you liquidise it or mash up the veg?
    I find that I have to blend it otherwise I can't take the lumpy veg LOL

    I mashed it but it was the flavour that was the problem, really grim (and I eat pratically anything!). The rats had some but the rest ended up in the bin sadly.

    Made broccoli and stilton soup recently with leftover stilton from xmas, was really easy and v. tasty, my OH loved it!

    1 onion gently fried

    then added:
    3 large parsnips peeled and chopped fairly small (as OH likes it blended later)
    2 potatoes chopped
    some thyme
    some curry powder to taste
    2 pints of water

    Boiled till veg was really soft then mashed it (as I was too lazy to wash the blender!!)

  • A nice variation when using soup with parsnips in that I like to use is to honey roast them first before adding to the pot just before the whole thing is blitzed.

    Would probably be too sweet for just parsnip soup but nice in a mixed veg/bottom of the fridge one

    I've been Money Tipped!
    This is a really thick, tasty soup and very filling. I used unsmoked bacon instead of pancetta and about 5 oxo cubes for the stock. Started it off on the stove and then transferred it to the SC where I left it for a couple of hours. I put all the veg through the food processor till it's quite small diced. The barley and the lentil combination make it really thick. Keep an eye if you do it in the slow cooker just in case it starts to catch on the bottom.
