As other posters have said, you can make soup out of anything that you have lying about, and I do this frequently to use up left over veggies. Also if I don't have time to do anything with veggies and know they will go off, make soup and freeze, rather than waste them. Blitz the soup if you don't like it chunky, freeze in small portions if you can. Also if the soup is "condensed", really thick and chunky that you can dance on. Freeze it like that, saves space in the freezer...you can always add water when it's defrosted.
Don't add cream, yoghourt etc to soups for freezing, as it will separate. Better to add when defrosted.0 -

The covent garden soup books have lots of yummy ideas - maybe get that out of the library. Otherwise I tend to boil up chicken bones to make a stock and then add whatever veg I have about - particularly lovely are onions, carrots, leeks, swede, parsnips, potatoes, sweet potatoes, turnips - basically a hearty load of root veg. I find it keeps me really lovely and full and I add no salt at all so know that it's all healthy (which often means I manage to justify a second bowl...!!)0

Hi, Im jinny, pleased to meet you all. This is my first post on this fab site, so do forgive me if this receipe has been posted before;
chop 1 elderly iceberg lettuce (mine was a morrisons yellow sticker)
chop 1 medium onion
add 1 ham stock cube
cover with cold water
salt and pepper to taste
boil in large pan for 20mins or until soft
dont be put off at this stage, it looks awful, like a pond
add 1 tin of peas drained I use marrowfat
cook for a further 5mins
cool slightly then blend
It turns into a lovely green colour, and tastes just like pea n ham soup.”Pour yourself a drink, (tea for me now)
Put on some lipstick
and pull yourself together”

Leek and potato
Carrot and coriander
Curried parsnip

I have homemade soup for my lunch everyday
Generally I use up any vegs thats left in the fridge and then add a couple of tins of tomatoes, couple of potatoes, some herbs, black pepper then top up with water. Cook until the veg has softened and then blitz in the blender.
For portions I used the plastic takeaway containers you can get from pound shops, they take about 500ml of soup (or 3 ladles full) which is precisely the size of my thermous flask0 -
Butternut squash and tomato is wonderful
Just butternut squash, passata tomato (lidl 29p) same amount approx of either hm stock or kallo organic chicken stock cube or what you prefer
1 carrot
1 clove garlic
bit of celery
1 potato
just chop all and put in pan with passata and stock and boil till veg cooked - blitz and serve - wonderful - better than tinned tomato soup anydaySaving in my terramundi pot £2, £1 and 50p just for me! :j0 -
I have loads of vegetables to use up so was going to make a soup today.However its lovely and sunny and the idea of my usually heavy veg soup doesnt appeal to me.I dont want to waste my veg so can anyone suggest a good recipe for a summer soup thats not so stodgey .thanks0
