Hi, broccoli and cheese soup recipes anyone?

My son in law made this a couple of weeks ago and I tried it today. It is so easy:

2 Broccoli (bogoff Tesco or frozen if you want)
1 onion
salt to taste

whiz in a blender and boil in pan with quantity of water to cook, then boil to reduce liquid to thinkness you like.

3 slices of stilton cheese ( any mature cheese might work but might be a bit fgreasy on the top of the soup)

Serves 4 easily

serve with crusty rolls and butter

Quite a strong taste, very filling and cheap

    We make this often too: leftover broccoli/cauliflower from Sunday lunch also works along with the stems that you have paid for in the supermarket - just trim off the really dry bit. Use equal amounts of broccoli and potato and just enough stock to cover - whizz in blender and thin with milk to give a "cream of" style soup and use more cheese (4 oz or to taste) but half cheddar half stilton (or similar blue cheese if on special offer ;) ) stir into the soup just before serving -this way you get a good cheesy flavour but not too salty. Serve it with bread fresh from the BM and guaranteed clean plates even from 4 yo and 2 yo :D

    Broccoli and stilton soup is my absolute favourite. Your recipes sound perfect: simple, quick and very very yummy!

    Also extremely nice with a little bit of cream for special rather than using milk, or if you manage to get any cream reduced, doesn't matter whether single, double, whipped. You just need a little as it is very rich but extremely scrummy.

    Also soup is really good for freezing, but don't add stilton or cream/milk. Add when defrosted.

    Why not, worth a bash. Not tried that yet, as if I don't have cream, use milk - but am a great one for substituting whatever I have, so next time will try the yoghourt.

    One other point when adding cream, don't let it boil or it will curdle, just let soup heat through, forgot to mention that earlier, sorry. :o
  • Hi all,

    Made this earlier this week.. made the recipe up as I went along, but it was lovely, so have written it out for future reference, and wondered if it might be useful to anyone on here. (both OH and I loved it, am making it again tonight to use up the rest of the broccoli!)

    It worked out very cheap, less than a quid, was easy to make, and made 4 big servings (was lovely with warm crusty bread too!).

    All quantities are approximate, you may need to vary the amount of stock and milk depending on how big your broccoli etc is!

    Broccoli potato and cheese soup

    Fry 2 smallish chopped onions and 2 or 3 cloves of garlic in a little oil till soft.
    Add 1 stick of celery, finely sliced and sweat for a few minutes
    Add 1 large head of broccoli chopped up (peel and chop stem and add that too) and 2 or 3 peeled and finely chopped potatoes. Cover with 1 pint of stock and 1 pint of milk and simmer until veg is tender. (about 20 mins)
    Blend, season and serve. Sprinkle a handful of grated cheese onto each bowl and serve with fresh crusty bread!

    ps, if you save the hard bits of cheese from round the edges of the cheese for use in cooking (a la delia) its absolutely fine used in this.. it all melts into the soup anyway - yum!
  • this sounds delicious - I was wondering what to do with the broccoli that has just arrived in my veg box. this will keep me happily in lunches for the next few days so thanks for the post!
