I'm not sure of the recipe you mention but I make broc and stilton soup regularly. Chop and fry an onion add vegetable stock and broc florets then cook until tender. Once cooked I whiz with a hand blender and crumble in stilton and heat through - delicious. I guess if you don't have stilton you could use another cheese sometimes I use low calorie soft cheese stirred in and melted.

I made broccolli and stilton soup at the weekend,
3 potatoes + handfull of broccolli, simmer in water to cover until tender, add about 4-6 oz crumbled stilton and about 4fl oz single cream. Season to taste.0 -
Thanks for those recipes, I will certainly give them a try. What I was really looking for was a way to use up the broccoli stalks - I am not sure if they need treated differently to the florets as they are tougher

I chuck in the whole head of broccoli - florets and all the stem (chopped up). I simmer until the lot is tender, blitz and add the cheese

I picked up the latest checkout magazine at Asda tonight (free). It has a recipe for broccoli and cheese soup - and it uses the stems. It says to thinly slice the stems then just add it to the stock with the florets and potato. It's all whizzed at the end. So there you go - get "thinly slicing"!

i have never made broccoli and stilton soup as the recipes i have seem very complicated. but having read here it seems really easy - i will be looking for cheap broccoli this week ( and freezing stalks when cooking broccoli as a vegatable from now on (till i get enough for another batch) need to get my mum freezing stalks too.Dogs return to eat their vomit, just as fools repeat their foolishness. ............. or broccoli:rotfl::rotfl::rotfl: I just sweat some onion in olive oil. Add stock and broccoli. simmer until tender. Melt Stilton in and blitz. Serve with crumbled Stilton and a swirl of cream.
