Hi, broccoli and cheese soup recipes anyone?

For broccoli and cheese soup, I normally just chop an onion, and slowly cook that off in some butter with a crushed clove of garlic. If I've got any celery in, then I'll add some of that too, finely chopped. When that's soft, I add some chopped broccoli - you could add a chopped potato here too, although not too much. Then I sweat this off for a few minutes, and then add stock to *just* cover. Simmer this for about fifteen minutes, until the veg is tender, then cool a little and blend. When it's blended, I stir in the cheese to taste, and season (watch the salt, as the cheese is salty and stock can be too). That's it really, it's sounds much more complicated than it is. I don't worry *that* much about quantities, as I usually make soup with what I've got lol.0

Hi, I just do mine by guess work but it always comes out ok.
Broccoli
potato
veggie stock
seasoning and some dried thyme
simmer until cooked, whizz with your stick blender then stir in some grated cheddar - yummy!Do what you love :happyhear0 -

Hi all!
Am planning on doing a broccoli and cheese soup today as have got a surplus of broccoli. Love Broccoli and Stilton but can't now have blue veined cheese cos I'm 26 weeks pregnant:j. (blue cheese and pate are going to be included in my first meal after giving birth, can't wait!). What other cheese have you used in soup, have tried it with Wensleydale before but it didn't melt very well and took a lot of cheese to give it a good flavour, any suggestions?

Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!0 -

Like Oliveoyl I normally use cheddar as I'm the only one here who likes stilton and it works well. There's an earlier thread that should help so I've added your thread to it.

Hiya Everybody,
can someone please help me with the recipe (MrsMcawber's I believe) for broccoli stem and cheese soup.
I bought lots of broccoli cheap in Aldi and so have lots of stem in my freezer for this soup. Someone mentioned it on here a few days ago, but the link in the index collection is not working.
