    I have a stack of leftover brocolli stalks, I fancy making a cheap version of brocolli & stilton soup but don't have any stilton in, will it work with chedder for a different version? Does anyone have any other recipies/suggestions?

    Yes, cheddar works just as well as stilton. There's a recipe for Broccoli, potato and cheese soup here

  • Or you could substitute a cheaper blue cheese like those Danish blue portions.
  • Bearing in mind that it will be used in soup, can't you freeze the brocolli until such time as there is some stilton, or similar, cheese on special offer or in the bargain bin?

    PS. :idea: Make the brocolli into the soup, freeze it, then do as above?

  • I have recently made a cheese sauce (bechamel with grated cheese), shredded broccoli stalks. cooked pasta in an ovenproof dis, top with grated broccoli stalks, pour cheese sauce over it, oven until top is golden brown. Yum Yum!

    Other tip I always freeze stalks from broccoli, cauliflower etc. when I have enough I will make vegetable stock!

  • Hi, im sorry if this is the wrong forum,but u guys helped me before with my bread making in conventional oven thread.
    The recipes you suggested are great, i rotate around 3 of them, my 8 year old DS loves the kneading and mixing part,even caught him stealing dough out of the airing cupboard,cheeky monkey.
    Anyway,was getting of the subjest there sorry, im hoping to make a broccoli and cheese soup tonight.
    Ive got broccoli,really strong yummy cheddar,potatoes and some vegetarian broth,im vegetarian but not my DS.
    Does anyone have any simple recipes i can follow?
    Ive looked at a few online but theyre all so complicated:confused:
