    Sixth Anniversary
    BROCOLLI AND STILTON SOUP

    1 potato peeled and cut into cubes
    200g brocolli florets
    1 onion finely chopped
    2pts chicken stock

    Put all ingredients into a pan and boil until tender.
    Blend til smooth add salt and pepper to taste.
    Enjoy!!!!
    Add stilton (as much as you like) to dissolve into soup and serve.

    Tomato, Lentil and Basil soup

    Made this today and it worked out pretty well.

    Ingredients:
    1 tin of chopped tomatoes
    150g dried red lentils
    500ml vegetable stock
    1 onion
    3 carrots
    Few fresh basil leaves


    This is how I made it but the pro's on here might have a better way. :)

    Chop the onion and carrots. Cook in a saucepan with a little oil for 5 minutes, then add the tomatoes and simmer.

    In another pan boil the lentils in the vegetable stock for 20 minutes (you may have to add a bit more hot water towards the end).

    After 20 minutes take the lentils and add them to the pan of vegetables and continue to simmer for another 10 minutes.

    After that add some finely chopped fresh basil, stir and the put the entire mix through the blender.

    Serve with some nice wholemeal bread.

    if the cupboard is empty try potato soup cut up potatoes carrots onion and swede turnip cover with water add two chicken stock cubes cook till soft bash with a potato masher and its surprisingly tasty

    I made a big pot of soup today.

    I put in:

    two ham stock cubes
    lentils
    three carrots
    one onion
    one leek
    parsley
    salt and pepper

  • Got this one from a magazine (Red or Eve? can't remember) - made it and it's easy and yummy.

    Moroccan-Style Lentil Soup
    Serves 4

    Ingredients:
    2tbsp olive oil
    2 leeks, thinly sliced
    2 carrots, thinly sliced
    2 stalks celery, thinly sliced
    2 cloves garlic, crushed
    1.25 (36fl oz) litres chicken or veg stock
    175g (6 oz) red lentils, rinsed
    2 tsp harissa paste
    Juice of half a lemon
    2 tbsp chopped coriander or parsley (I used both)
    salt + pepper

    Method:
    - Heat oil in a large pan over a medium heat
    - Add leeks, carrots, celery and garlic and cook for 5 mins
    - Add lentils and harissa
    - Add stock and bring to the boil
    - Simmer partially covered, for 20 mins, or until lentils are tender
    - Season to taste with salt + fresh ground pepper
    - Add lemon juice
    - Stir in fresh chopped herbs

    It says to serve with flat bread, although obviously any will do. It freezes well - I freeze it in portions to take into work for lunch.

    The soup shop near where I work does a miso soup with cubes of tofu, rice noodles, spring onions and coriander chucked in - not tried making it myself though! You could probably substitute tofu for chicken if you don't like tofu.
  • I made some soup and it was disgusting, I must have done something wrong!! :rolleyes:

    I want to cook it in the slow cooker as this is the easiest way for me- it can be cooking when I'm at work or asleep then!

    Please help with slow cooker soup recipes please!!!
