    Hi.

    I have just made a huge pot of cauliflower and leek soup and it's really yummy. But I don't know if it's okay to freeze.

    It's:

    1 large leek, fried in butter till soft with garlic
    Added lots of cauliflower, vegetable stock and milk and simmered for about 20 minutes.
    Blended.

    I presume it won't do it any harm to freeze it? I've never frozen soup with milk in it before.

    (By the way, I think I would have been nice with grated nutmeg...)

    I've frozen carrot and corriander soup with milk in it before and its been ok.
    Nevermind the dog, beware of the kids!

    I've been Money Tipped!
    I am having my ex round for supper next week (broke up because he left the country , so we still like each other!) and I need to impress him! He absolutley adores soup , so does any one have a cheap soup idea that actually tastes v expensive and impressive?

    What about a Gazpacho (cold tomato soup from Spain) It' s pretty cheap but exotic. try this recipe (you will need a blender)

    If you are feeling adventurous you can add chili or i had a lovely one made with avocado instead of tomoato in Mexico.

    Ingredients

    1 onion, chopped
    2 garlic cloves, crushed
    2 pints vegetable stock
    2 carrots, chopped
    125g (4oz) green veg (courgettes, peas, green beans, chopped green cabbage)
    handful of fresh basil, torn
    tin of haricot (or other) beans
    125g (4oz) small pasta shapes
    1 pint or bottle of passata
    olive oil

    To serve

    pesto
    parmesan

    Sauté the onions and garlic in olive oil for a few minutes.

    Add the veg, herbs and stock and simmer for 10 minutes.

    Add the beans, pasta and passata – simmer for another 10 minutes.

    Done!


    Serve with a tablespoon of pesto in the middle of each bowl and sprinkle with parmesan. Lovely with loads of garlic bread.

    Impresses everyone I make it for.

    I agree with MinnieSpender, a good minestrone soup is hard to beat. The recipe I use is a Delia Smith recipe: Minestrone Soup.

    I add extra pasta and replace the parmesan (apparently it smells funny :rolleyes:) with grated cheddar. Serve it with crusty bread to make a really filling main meal.
