    Thought given the weather a nice thread on successful soups would be appreciated so here goes:

    well it's not exactly low fat but it's really scrumptious AND if you just eat a wee bowl alongside a salad then it'd probably not be too bad, it's fairly filling


    Stilton, Apple and Celery (or Celariac) Soup

    2 med red onions finely chopped
    1 medium celeriac (or 1 large head celery) finely chopped
    7 apples, peeled and finely chopped
    butter or fry light
    250g stilton (could try other cheeses, maybe a lowfat cheddar?)
    1.75 litres boiling water
    3 chicken stock cubes (possibly 4, to taste but remember stilton is salty)
    cream to taste (optional)
    Large Pot/stock pot


    in a large pot or stock pot cook onions in butter or fry light until they are just becoming translucent, then add in celeriac (or celery) and apple and sautee until everything is softened but not mushy.

    add in the boiling water and the stock cubes and mix well. gently boil for 30-45 minutes (until the stock really takes on the apple/celery flavour) take off the heat and add the cheese, stir well until melted.

    serve in small dishes and add a splash of cream if you like

    this recipe can easily be halved i just do a big lot at once then freeze the extra for cold rainy days. if you use celeriac you won't need to puree as it thickens the soup enough to make it more than watery. with celery you may want to puree.

    you can probably use less stilton as well but dh used to cook this for a fancy restaurant when we were on skye so they always made it luxuriously rich and decadent

    we just made this last night, even my picky soup hating 4 year old loved it

    oh, be sure to save the apple peelings and cores in a bag in the freezer, next time you make stock chuck those in apple and pear add a fantastic depth and gorgous flavour to savoury stock

    Spicy Parsnip Soup:

    6 Parsnips
    2 Potatoes
    Veg Stock
    Boiling Water
    Curry Powder
    Onion

    Cut all up.
    Fry onion

    Lob all into slow cooker (or big pot), add boiling water and stock ... allow to simmer for a couple of hours in slow cooker (or about 45 mins on hob).

    Blitz with the liquidizer or mash, dependant on what you have available.
    Add a bit of cream if desired.

    Yummm .....

    Tomato and vegetable soup
    1 tin chopped tomatos
    half butternut squash, cut into pieces
    1 large sweet potato, cut into pieces
    2 carrots, cut into pieces
    2 cloves garlic, sliced
    1 tsp ginger powder
    pint veg or chicken stock
    Cook in the oven (180 C) for 45 mins, then blend.
    Lovely with crusty bread and butter!!!!

    Parsnip and Orange Soup

    5 Parsnips, cut into chunks
    2 Onions, diced
    2 Cloves Garlic, crushed
    1 Orange, juiced
    Chicken Stock

    Soften onions and garlic in a little veg oil for approx 5 mins. Set aside. Saute parsnips unitl lightly caramelised. Return onion and garlic to pan. Add stock. Simmer 10 mins. Season. Add orange juice. Blitz with stick blender.

    This is scrummy served with cheese and herb scones.

    Squash and sweetcorn soup:

    1 butternut squash
    1 onion
    cream
    stock

    Dice onion and sweat while peeling and chopping the squash.
    Make veg stock - about 2 1/2 pints
    Add stock and squash to onion and simmer for 15 mins
    Add sweetcorn and simmer for 5 mins
    Liquidise
    Add cream
    Bring back up to heat and serve
    Yum!!!

    I love this soup


    Also: chicken and veg broth

    half a roasted chicken
    random veg ( potstaoes, peppers, sweetcorn,)
    veg stock
    cornflour herbs

    chop and sweat veg, add ripped up chicken (including breast) and herbs.
    Add stock
    Simmer
    Mix cornflour with cold water then add to soup to thicken a bit
    Eat

    This freezes really well and is lovely with black pepper in
    Great for using up leftovers

    Butternut Pumpkin (Squash) Soup

    Cut up one butternut pumpkin and one onion
    cover with water about 1/2 inch above vegetables
    add a couple of vege stock cubes and salt and pepper to taste
    Cook till soft and then whizz in processor
    If it tastes too weak then cook until water boils down further.
    I also add a splash of skim milk at the end (you can add cream as alternative)

    When I'm making things in the slow cooker I deliberately make more liquid than you need. Then I use the liquid as soup for my lunch the next day. It means I have lots of liquid versions of the meals weve had.

    Does anyone have a receipe for sweet potato soup os could I use the parsnip one and subsitute the parsnipps for sweet potatoes? :confused:
