Hi, broccoli and cheese soup recipes anyone?

But my friend made a stilton & spinach one & it was lovely & not really green.
But I thought I would make the tradtional one:rolleyes:0 -

I have my own recipe but I don't do measurements so not sure how useful it would be to you.
Basically fry half an onion in butter until softened, add flour to form a roux, add half milk and half chicken stock, whisking continuously. Add broccoli florets and crumbled stilton. Simmer until broccoli is soft and then whizz with a hand blender.
I don't add salt as I think the stilton provides enough.0 -

I know its going to be green, but the recipe in the Nigella book looks like guacamole

I made this yesterday, never done it before, but will be a regular from now on, got more stilton in the freezer as MrS had it reduced from £6 to £2.
Fry an onion
add veg stock, 2 spuds cut into small chunks, and I had 400g of xmas broccoli to use up
bring to the boil, then simmer for 20 mins
blitz in a blender then return to pan and added crumbled stilton, stiring till melted.
Then eat for lunch:D
very yummy and does not look like spinach soup, closer to leek and potato colour.0 -

I tried this one this week from The Best Keps Secrets of the Women's Institute.
Never had it before would defo recommend:
Serves 6.
Heat oil in a pan and soften the onion (1, chopped) for a few mins.
Add the potatoes (2 large, chopped) and stock (1.1l / 2pts veg or chicken stock)
Bring to the boil and simmer for 10 mins
Add the broccoli (350g / 12oz roughly chopped) and cook for a further 10 mins.
Puree the soup or mash for a chunkier texture
Add the Stilton (80g / 3oz, crumbled) and milk (150ml / 3/4pt) and season to taste with salt & pepper and lemon juice (1/2 lemon)
Heat through without boiling and serve with a swirl of cream
Note: I added extra Stilton to suit my taste.
Was most impressed with this receipe - it is generally an excellent book that I wouldn't be without.

I lightly fry some onion and garlic, add it to a big pan of stock, chicken is best but I tend ot use veg just in case a veggie mate pops in for a feed, then add some celery and potatoes to stock, let it simmer for about 10 mins to give pot a chance to soften than add chopped broccoli ,bring otthe boil and t hen simmerfor another 5-10 mins. Blend it all, then make a white sauce, not too thick, put it all together and crumble in as much stilton to suit your taste, then add cream. Is not very green, and tastes delicious and very filling as well. Freezes well, just beat it with whick when reheating as the cream sort of seperates when defrosting and looks disgusting.Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.0
