    Could someone give me some quick advice? I used to make pizza bases myself by hand but haven't for years and I really can't remember now how I did it nor find the recipe. I don't have a BM and have easy dried yeast and all the recipes I can find so far are for BMs or use the other yeast, I have just made dough up using some plain flour (only have wholemeal bread flour so thought I would plain as I am fairly sure I used that way back when) trying to follow a recipe in a book that seems to use different yeast. It just didn't come together so I added some water - worrying it might have been a bit too hot though. I have it sitting on the boiler waiting to rise but I really don't see it happening as it just didn't get elasticy enough. Flour might have been a bit old but yeast wasn't. Anyway there are so many pizza threads I didn't want to start a new one but the few I have looked through just aren't really answering my problem. So could someone offer me a recipe that uses what I have got and doesn't mention a BM or at least can you tell me how to modify it. I want pizza so bad and I thought I could rustle this up in no time but I just seem to have become a bread dough dunce. Btw my recipe used olive oil and I do remember adding that before too not sure if they all do. I want as authentic a dough I can get no scone type ones as I hate those. Sorry to be such a pain.     Hi all and welcome to all the lovely newbies. Can't remember which once of you said that lurking on here felt like reading someone's diary but, we all lurked before joining. I felt like I was gatecrashing but, having lurked for a few weeks beforehand, I just knew it would be a great thread to join
    and I've not been disappointed at all. We are a lovely bunch if if I do say so myself!

    CHARRLIE'S MUM - now that is a very tasty Indian - yum,yum, yum!! He took my mind off Colin Firth for a nano-second!

    CHOCOLATE.ORANGE - Hope DS is getting over the shock. Thank heavens he wasn't badly hurt.

    NELSKI - a meet would be great depending on how close we all are and I know AUSSIE wants to make a square. So, it's off to Lamb Island then - I'm sure she'll put us all up!

    Well, I've had a hectic day. I needed to go to the bank to get the wages out for DH's sub-contractors but, of course, he went off with the cheque book so he had to come back with it. Then I had to go to various other banks and the post office and do my food shopping. I felt quite frazzled because the whole day has just conspired to make life difficult, so I treated myself to a charity shop mooch. I found it really relaxing just browsing. Well, almost browsing - I found three jumpers, a cardi, a posh skirt, a lovely girly folder (ideal for a Christmas present) and some beautiful lace, and spent less than a fiver! I couldn't resist the wool shop but did not buy any wool. I did buy some purple ribbon and a purple butterfly to use when I wrap DS2's bride-to-be's birthday pressies up for Monday. She loves purple and sheep so her pressies are on that theme combined IYSWIM!

    Anyway, I'm dying for another cuppa so I'm going to put the kettle on and see if I can have a sit down before DH comes home. He's working over the weekend to get a particular job finished so he'll be home early tonight. He looked kn*****d when he came home with the cheque book! I think we'll be crashed out on the sofa by 7pm!

    evening all,

    All went well for mum at the hospital it was a harmless cyst which they drained, got three lots of fluid out yuk, sorry if that tmi, thought that as you had been talking about CC's knickers all morning that you would not mind :D .
    So good news for my mum, thanks for the kind thoughts.

    Picked up my new glasses today third time lucky, they finally got them right, only been waiting two months, they have put top of the range lenses and put an anti glare coating on them, for free :j I had originally paid £90 for them, but because i have caused such a fuss they gave me a £45 refund, :T but with the super duper lenses and coating I have a pair of glasses worth several 100 £ :T .

    Went shopping with my mum, took her into evans and she could not decide between a two jumpers, so without her knowing I took one up to the till and bought it for her, she was chuffed to bits, and bought herself the other one.I love my mum :o

    OH and I off out for a proper grown up dinner tonight with wine and everything :beer: .

    Martyn I expect a 5000 word essay on what you have done today :D

    Afternoon everyone ...................((((((((((((((HUGS)))))))))) if you need one..........

    I have been at my friends all day, she wanted me to clean the inside of her conservatory, and boy was it a mess.................I really needed some mould remover, but had to make do with stardrops and bleach.........I now have a rather large rug in my car, going onto freecycle in a mo to see if there is anyone who wants it.

    She gave me my lunch, so will be having a roll and cheese for my supper, OH can have fish and chips if he cooks it himself, I am k********d.

    Will not be doing any sewing tonight, I need a rest, have moved a dresser and settee round, and also put down a new rug after mopping the floor.....I lef her putting the stuff back into the dresser and re-arranging her bits and bobs.
    Was 13st 8 lbs,Now 12st 11 Lost 10 1/4lbs since I started on my diet.

    Only skimmed the thread and all I can remember is that someone had a funny pair of knickers:confused: :rotfl: and that redruby has got some new specs:T oh and that someone else has made pea and gammon summat :confused: :rotfl: hey it's friday I can't remember everything. Had a mooch round the shops in brighton earlier, what a load of old s**t, I also went into evans redruby and I thought it's the worst it's been in years:confused: I did spend a little bit of money though I bought mario olympics for the wii, has anyone played it? I have heard it's good so oh and I will have a go tonight, no doubt we'll ache in the morning (from the wii I mean:rolleyes: :rotfl: )
    I think I am going to open a bottle of Gavi in a mo and have a glass or 3 :beer:

    Today is running away with me so just a quicky. May be able to get back later, apologies for forgetting everything but that is me today.

    Nelski - don't worry I'll ensure you have a square.:A

    Some people do communicate via other methods than the boards, and some are in contact with each other and have even visited each other, so I am sure that between us if a strategy is applied we can still get the squares together without breaking the rules. Some people can travel further than others to meets, so maybe regional meets, with those who travel the country for work, meeting up for other meets. Nelski do I see a role for you here?? As long as the establishment where you meet sells wine? :beer: Just a thought anyway, and I know Aussie has visited some of you.

    Day been chaotic, Review Meeting for Dad at care home, for NHS and Social Services to decide which percentage of his care they each are responsible for. The questions they asked they could have been answered by the home with probably more accuracy. i.e. Does he have a preference for a type of music. My Dad is almost deaf, with dementia, and never really cared that much for music:o

    Quick trip to town. Then home for quick lunch and then visitors for the afternoon, friends who are off to Belgium/Holland with us in 3 weeks. Now awaiting of DS and GF.

    hi :hello: afternoon, been to see the orthopedic consultant and he said that he cant do anything for my feet:sad: and that they will improve if the infiximab works:rolleyes: that i don't need a operation on my back yet :D but that he would advise ill health retirement or if they could find me another job in the trust. i feel a bit numb i have to admit i hate change :o and still don't know what will happen:confused:

    The dough recipe I use is from the BBC Good Food magazine's Christmas veggie issue from a couple of years ago. It makes two pizza crusts, 33cm in diameter. I bought my pizza pans last fall from Carrefour in France, they are enamel (I don't use Teflon, and it seems that's all you can get in this country) and have holes in the bottom so that the crust gets crisp.

    225ml warm water
    1-1/8 teaspoon dried yeast
    pinch of sugar
    340g strong white flour (this time I made with around 1/4 whole wheat flour)
    3/4 teaspoon salt
    1-1/2 tablespoons olive oil

    Put water in a container (I use a glass measuring cup) and nuke until it is blood-warm, around 30 seconds on high (test on your wrist). Add sugar and yeast, and set aside to prove for 10 minutes or so (until it gets foamy).

    Combine flour & salt. When yeast is ready, stir in olive oil, then add this mixture to the flour. Stir until more or less combined, then turn out onto the counter. Knead for 10 minutes (adding more flour if the dough is too sticky), then form into a ball. Put in a greased bowl (large enough to allow for rising), cover and set aside in a warm place for 1-1/2 hours, or until dough has doubled.

    Punch dough down and divide into two equal pieces. Roll each half of dough out on a floured countertop, then transfer to greased
    pizza pans (I usually roll out to about 3/4 of the final size, then finish stretching it into shape on the pizza pan). I then usually let it rise again for 15 minutes or more (this time I let it rise for around 45 minutes, as I had to go to the store).

    Preheat oven to 230C. Cook
    pizza bases for six minutes (turn around after three minutes), then let cool on a wire rack. When cool, I wrap the bases in foil, put them in plastic bags and freeze them.

    When I'm ready to make
    pizza, I take the bases out of the freezer, add sauce and toppings, and bake in a 230C oven until the crust is crispy (usually around 30 minutes). I cover the pizza with foil except the last 5 or 10 minutes because I use non-dairy cheese (Cheezly), and it dries out if cooked at high temperature without being covered. If you use dairy cheese and don't cover the pizza, it probably won't take 30 minutes to cook.
