Bubble and squeak

Hi Sammy :hello:
My that's a lot of questions?!:rotfl:sammy_kaye18 wrote: »Hi all
am a novice at bubble and squeak making.
I made too much veg last night (carrots and sweetcorn ) and wanted to attempt bubble and squeak tonight and figure I would put it with some nice herbed pork sausages i had reduced from the coop. Now I have several questions
1. What should I serve with it? as Im thinking I'll make more like potato patties/cakes and serve 2 sausages - but not sure if more separate veg is best (ie peas) or better off with beans etc. ????
Serve them with what ever you would like. I would have them with fried eggs and sausages or beans or both
2. Do I need to add onion in there?
If you want to - you don't have to
3. Mash is cooking at the minute - is it best left to cool down to hold its shape?
I would mash (warm or cold) make up your patties, then refridgerate them for 30 mins to help them hold their shape better
4. Should the mash still be quite coarse for holding purposes?
What- do you mean lumpy? Personally i don't like lumpy mash. Or do you mean dry?
5. and should i still be adding milk/butter to them?
I would add butter for taste but personally milk would make them runny gloopy for me
6. Do i need to coat them in flour to help hold their form when cooking?
You can - I didn't . I found putting them in the fridge helped them
7. do I need to recook them or simply warm them through?
Personal taste? I like them fried in a frying pan on a low heat so they go crispy and crunchy
8. Best way to re heat/ cook them?
Above
many thanks in advance!!!!!!!!!!!!!!!!
I'm no expert in B & S so can only give you my advice. There is a thread with a wealth of others experience

This may help - Jamie cooking bubble and squeak
I'll add your thread to the B & S one later

Hi all
I'm after a bit of advise about tonights tea.
We had slow roast shoulder of pork on Sunday and there are lots of leftovers that i want to use for tea tonight. I also have lots of left over mash too.
I did think about doing bubble and squeak ( i have cabbage in the fridge that i could cook) but for some reason i think it might be a bit too dry.
Any suggestions please?
Thanks

Bubble and squeak sounds fine with left over pork, but if you think it will be too dry try slicing it and pour some gravy over and heat through in the oven and serve as a roast again or make a pork curry, stew or add atin of tomatoes, some garlic, peppers, mushrooms and herbs for a mediterranean style stew and it only takes an hour to cook.

we had B&S from leftovers last week too, and I was worried about the same thing. I sliced some tomatoes in half (just bog-standard ones), crushed some garlic over them, added a little salt & olive oil and slow roasted them for about an hour in a moderate oven, or until they were all caramelised round the edges. We ha left over ham, B&S & the tomatoes & it was all eaten !

Hi Talulah :hello:
Am hungry now after reading that?! Ok, few threads to help you out - I'm relatively new to bubble and squeak (Mum just didn't make it when I was a kid), but it is such a great way of using up leftovers!
Bubble and Squeak . Jamie oliver made a YUMMY looking bubble and squeak I always remember watching it - video here and it starts 15-15 in:j
Leftover pork - for more inspiration
I'll add your thread to the first link later to keep the information together
thanks:)

Me and OH are planning on eating things in the house before wasting money shopping
I've got everything to make bubble and squeak cakes - but what can i serve with them? I'm going to put a fried egg on top but what else? really stumped lol
Meat wise - we dont have a lot of meat in the house, I've took some sausage meat out the freeze but i was going to do sausage rolls - might end up making sausage balls if i cant find anything0 -
Bubble and squeak with a fried egg on top and served with baked beans!! Comfort food at it's best!
It's also good with sausages or bacon.0 -

Its funny you should mention that - before i saws your post i mentioned to OH i was going to do sausages with it and he really didnt like the sound of it!
Instead he now wants bubble and squeak, yrkshire puddings and gravy.
I just dont get it lol0 -
Mmm yum I love bubble and squeak it takes me right back to my childhood over 60 years ago.Mum always plonked a crispy based fried egg on the top with runny yolk.It is definitely comfort food in the same catogory as bread and dripping or conny-onny sandwiches none of which I can eat anymore God I hate all this healthy eating at times
