    For me the key thing is lots of butter - not healthy but tastes good :) I chop my potatoes up into chunks rather than mashing, usually cos I make mine with leftover roasties. Mmmmmmmmmmmm, I love Bubble and Squeak.

    My hubby swears by making patties, coating them in flour and frying (pref in beef dripping but butter with oil works too) until almost black. I actually prefer his boxing day bubble and squeak to my Christmas dinner!


    It never tastes as good if you try to make it on purpose rather than with leftovers, using leftover roast veg gives it a richer, sweeter flavour.

    I have the last of the allotment sprouts that I am using up and some carrots that need to be used up and thought this would be a god way of doing so.

    We ALWAYS have bubble and squeak for boxing day lunch, made with christmas day leftovers. It's the law!

    I cook plenty of veg so that there is extra, and anything left goes into a bowl and is well chopped up. I cook mine in dripping, which I heat in a frying pan. I put all the veg in and pat it round to make a big cake, then let it crust up underneath. I stir the crust through a couple of times for and flip over finally to do both sides.

    Must be served with tomato ketchup:rotfl:!

    I mash them altogether. Then cut up and onion fine and fry that first. Add to the veg and re-fry the lot, but let it get a brown crust, that's the best bit!

    we never get bubble and squeek in my house anymore - all leftovers are donated to son-in-law and it provides him with a couple of lunches for work! he even takes the gravy to reheat and pour onto it!
    but yes you can either melt a (large) knob of butter and then add the veg and squish it down with the spatula (but you MUST leave it form a crust)or if it includes mash then I normally make them into patties and dredge with flour and then cook them! then they get a good grinding of black pepper on them! (and often a little pat of butter).

    (I have a funny feeling that son-in-law wont be having leftovers for next week - as I really fancy some bubble and squeek now).

  • Not a recipe as such, because it always tastes better with leftovers, especially cabbage and sprouts. Cook extra when you do a meal, but if you haven`t got leftover roasties cut up a few wedges and throw them in with the leftover veg, I put leftover stuffing in too. Coat frying pan with oil, put in the veg and let it brown lightly.
