  • whatever is left over from a roast gets chopped up and fried in oil, I put cranberry sauce in with mine.

    parsnips
    stuffing.
    I chuck in a tablespoon of cranberry , nice to take to work for lunch also

    It takes longer than you think to be ready. At least 20 minutes or when the potatoes are starting to brown. Keep stirring it.

    I'd say that if you want to make it into those little 'cakes' that they sell in gastropubs then it needs to be done with mash or something to bind it all together.

    I often have a version of Bubble & squeak for lunch and deliberately do extra veg the night before. It's particularly tasty if you fry a rasher of bacon in the pan first to flavour the fat. Or if I'm a bit short of veg, I'll fry up a couple of mushrooms and some spring onion before adding in the cooked veg. LO fried onions make it particularly tasty.

    If I don't have leftovers then I cook cabbage and potatoes, mash them together and fry in lard till browning.. oh my I want some now..

  • Bubble and squeek gently fried in a drop of garlic infused olive oil with a poached egg on top is one of my favourite 'comfort' foods.well worth having extra cabbage or brussels cooked just to have for a nice meal on Monday night

    Nigel Slater recommends equal quantities of potato and vegetables by volume, not weight. It works.

    My tip is to make a higher number of smaller "cakes", as they're easier to flip over. Also fry them until there is a brown skin, which should hold them together.

    PS. I know that it's a classic leftovers dish, but there's no reason why one shouldn't cook some potato and vegetables to make it.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    I use mash and cabbage or sprouts, and whatever is leftover from lunch. I like to form them into 'cakes' with floured hands and fry gently, turning once so the top and bottom of the cakes are browned and crisp. a fried egg and a bit of brown sauce - meal fit for a king!
  • I always boil veg/potatoes allow to cool, add fried onions. When cold add raw egg and mix. The egg helps it bind and not fall apart personal preference only

    Just make sure it is not too sloppy.

    Make sure oil in pan is hot and spoon rounds into pan pat down and fry each side until piping hot again.

    So easy and sometime we have sausages with it to make a meal with brown sauce.

    That is one of my favourites, thanks for the reminder. I'll add it to next weeks meal plan :)
