You will be converted Marion - you will never throw away another carcass!!
In a big pan, put
the carcas,
an onion (you can leave the skin on, just cut off anything 'dirty' - the skin adds colour - cut into 4),
maybe a stick of celery (I usually have some looking tired in the fridge)
a carrot,
5 pepper corns (no salt),
a bay leaf,
and anything else you think is a good idea.
Put enoughh water to cover the chicken.
Bring to boil - lid on, simmer for 1-2 hours (more if you can bear it)
strain into a bowl, pop in the fridge. When cool, as you say, you can remove the fat.
Obviously, there are 101 ways to do this, but this is my way0 -
breakfast 2 x cereal bars light
lunch scrambled egg , cheeses hea 2 slices of ww bread heb and low fat marg syn
tea .....quorn sausage with cauli red cabbage, sprouts mmm mash pot

On the subject above how long does chicken stock keep in the fridge? I've got some I never got round to making soup out of and I'm a bit afraid of opening the tub now as to what I'll find!
On a much lighter note I had another meeting today. My work have found me suitable alternative work - Personal Assistant to the seven(:eek:) Group Directors! I've done PA for one before but for seven! :rotfl: :rotfl: :rotfl: My OH was laughing his a&*e off when he phoned me just now!Thanks for all your wishes though! :T

Thanks for that angie loves veg!:j I was going to use my pressure cooker as it is the biggest pot I own. Do you think 30 minutes in there at high pressure will do the trick?

Retiredlady - bring to boil, with lid and weights on and listen for the HISS and then 15-20 mins mins should do it I reckon. Hope you like it!:D0

Thanks all, I'm still grinning from ear to ear. Had a good day today except a penguin, but well within my syns (are the 5 or 6 syns - can someone confirm for me?) plus 4.5 for a cereal bar. Now off to Mum n Dads for dinner which will be well within my free/Heb foods (its ALWAYS meat n two veg - nice small portions :rotfl: )
