    But the stuff I have isn't strictly speaking lean? I've just cut off the fat, I dont want to be cheating myself IYKWIM. Syns online has it as being 2 syns for normal bacon, am I just worrying too much?

    As long as you take as much of the fat off as possible, and cooking removes a lot more, you should be fine, Becca. Don't worry chuck. You can buy those bacon medallions, with no fat on, but I think they are very dry xx

    gpuss.... thats settled then.... red for me then all week !!!!!! consultant said i need to loose another 2lb so i can get the 10 thingy !!!!! havent got a clue what she means, so im sure i can achieve that with Brads help.

    Amie, I think the Club 10 thing is when you've lost 10 per cent of your body weight, so a major milestone to aim for:T.

    Can't decide whether to have Brad free on a red day or syn with him on a green:think:;)

    does anyone know how long butter beans should be soaked for? i know its meant to be overnight but say you put them to soak in the morning, how many hours later would they be ready?

    could i adapt this http://www.waitrose.com/recipe/Tomato,_Chicken_and_Butter_Bean_Cassoulet.aspx and use frylight instead of olive oil to mix the breadcrumbs into or would that be a misuse cos i'd probably have to take the lid off and pour a bit out instead of using the spray lid.

    Spicy chilli and butternut squash risotto (makes 4 servings)
    1. Bring 852ml/1½ pts stock made with Vecon to the boil in a saucepan. Meanwhile, spray a large non-stick frying pan or saucepan with Fry Light. Add 1 finely chopped red onion, 2 finely chopped cloves of garlic and 1 deseeded and finely sliced chilli, and cook gently for 2-3 minutes, stirring occasionally.
    2. Increase the heat under the frying pan to medium and add 255g/9oz of Arborio or risotto rice to the pan, along with 140g/5oz chopped butternut squash. Stir in a ladleful of the hot stock.
    3. Wait until the stock has been absorbed, then continue to add a ladleful of boiling stock at a time, as soon as each addition of liquid has been absorbed. Stir constantly to prevent it from sticking.
    4. Add the stock in this way until the squash and rice are creamy and al dente (tender, but retaining a bite). Season, stir in some parsley and serve.

      Thick carrot and coriander soup
      Roughly chop 9 carrots and 1 large onion and place them in a large saucepan with ½ tsp of garlic salt, 1 tsp of ground coriander, 85g/3oz of yellow split peas, the same quantity of pearl barley and 1¼ litres/2 pints of stock made with Vecon. Bring to the boil and simmer for 1 ½ hours, adding more water if necessary. Whizz in a food processor or with a hand blender and serve with a swirl of very low fat natural yogurt and fresh coriander leaves if you fancy.
    Spicy sweet potato wedges
    1. Peel some sweet potatoes, chop into wedges and place in a saucepan of salted water.
    2. Bring to the boil and simmer for 8-10 minutes until just tender.
    3. Meanwhile, in a pestle and mortar, crush ½ teaspoon each of coriander seeds and cardamom seeds (discard the green outer husks), together with ½ teaspoon of chilli powder.
    4. Drain the sweet potato wedges, spray with Fry Light and sprinkle over the spices. Place on a pre-heated ridged grill pan, spray again with Fry Light and grill for 2-3 minutes on each side.

      Lemon Mousse (makes 4 servings)
      1. In a cup, pour 2 or 3 tablespoons of boiling water over 1 sachet of agar agar. Stir thoroughly until dissolved and set aside.
      2. Separate 4 eggs, reserving the whites in a large bowl. Place the yolks in a microwaveable bowl, add the grated rind and juice of one lemon, 4 tablespoons water and a pinch of salt. Microwave on medium for 40 seconds, then stir in the agar agar.
      3. Leave to cool, then stir in 4 level tablespoons of artificial sweetener.
      4. Whisk the egg whites until they form peaks. Whisk in the fromage frais, then fold in the lemon mixture using a metal spoon.
      5. Pour into 4 sundae glasses, then chill in the fridge until set.

    i had a snack earlier of chopped banana over slightly warmed vanilla muller light instead of custard.

    Found this on the website for the up and coming summer: Buy moulds and make your own ice lollies from strong sugar-free squash, or try mixing partially-defrosted mixed summer fruits to low-fat fromage frais with a little artificial sweetener for a Free alternative to ice cream.
