    I'm ashamed to admit that we've never been very adventurous with Fish, been sticking to the same old Cod and chips and mushy peas for years now on a Friday night, all Home-made I hasten to add, and the odd bit of Tuna steak, tinned sardines, salmon steaks etc but after watching all the Fish programmes on Channel 4 I've decided to make some changes and bring a bit of variety to my Meal planner for a Friday.

    I ventured into the Fish counter on Friday in MrM's but was overwhelmed by the choice and prices etc, bought some Pouting which was very nice but wondered what Fish you all eat or could recommend - I'm not the sort of person who can go up to a Counter and ask for advice in the middle of the Supermarket.:o

    My favourite is mackerel, you can do so much with it and it's really tasty. Gorgeous grilled, drizzled with a bit of lemon juice and served with some roasted veggies like cherry tomatoes, aubergines, courgettes and a bit of olive oil.

    Did you see on Hugh's Fish Fight where he got the chippies to sell deep fried battered mackerel in a bap? We decided to try that, I made a beer batter and it was absolutely lovely, it had never even occurred to me to deep fry it before :) Definitely have a go at that.

    I also really like herring but it stinks the house out. Also love scallops but they're a bit pricey to have very often, and mussels (which are dead easy and very quick to cook) but we can't always get hold of them.

    I am SO envious of people who have a good fishmonger in their town. My nearest one is a 30 mile round trip, and it's 6 miles each way even to Tesco or Sainsburys where there's a fish counter.

    I'm going to be doing this after I've finished on here ...

    TROUT & BACON

    This recipe is almost too good to be true. It uses a few inexpensive and wholesome ingredients, the preparation is really simple, yet it gives a really luxurious result with an unusual but delicious combination of flavours.

    Serves 2

    INGREDIENTS

    2 trout fillets with the skin on
    2 large or 4 small rashers of bacon
    1 tablespoon of butter
    ¼ of a teaspoon of dried parsley
    Ground pepper to taste

    METHOD

    Rinse the fish under cold water. Remove any excess water from the fish with some kitchen paper. Run your fingers along the fish and remove any remaining small bones with your thumb and forefinger or a pair of tweezers.

    Put the bacon in the bottom of an ovenproof dish.

    Put the trout fillet, skin side up, on top of the bacon.

    Mix the butter and parsley together.

    Spread half of the parsley butter on top of each trout fillet.

    Season with the pepper.

    Cook in a preheated oven at 180°C, 350°F, gas mark 4 for about 25 minutes.

    ADDITIONS & ALTERNATIVES

    Use fresh parsley instead of dried parsley.

    Serve with new potatoes and green vegetables or crusty bread and a salad.

    TIPS

    Buy a whole trout and get the fishmonger to fillet it. I did this when I tested this recipe and it only cost me £1.33 or 66½p per fillet.

    You can get ready-made pats of butter with parsley in it from supermarket fish counters.
    The acquisition of wealth is no longer the driving force in my life. :)

    Bought quite a lot of fish (was 2p), it is in the bags from the fish counter in a*da.

    But what do I do with it?

    I am Vegetarian, so do not eat fish.

    Was thinking of wrapping it in foil, and cooking it in the oven with something? and for how long? Or has anyone got any nice easy recipes for me too try.

    I've been Money Tipped!
    I would lightly pan fry it, in a good pan with a teaspoon of butter and a teaspoon of oil, just to stop it sticking.

    I would then serve it with some melted butter with a lot lemon juice and capers in it. Delicious, packed with flavour, the lemon and the capers cut through the fat of the butter, but the butter makes it silky and rich and enhances the gentleness of the fish. You could also use some white wint in the beurre sauce. This is simple, fresh tasting and delcious. I would most likely serve this with new potatos and green beans, but given the time of year some sauteed potato might be nicer, or even some wild rice, which would take the punchy flavours of lemon and capers really well.

    I like fish wrapped in foil with a knob of butter and a clove of crushed garlic. Add a slice of lemon in as well.
    Roast it for around 12 minutes and serve with garden peas. :)
