You say you are a veggie. Do you eat fish? If so I'd treat yourself to some smoked fish - cheapest going - and make a fish pie. Yummy. Stretch your 2p white fish by bulking it out with mashed potato topping.
Poach the fish in milk and make a white sauce with the fishy milk and cornflour. This is a firm favorite with out family as you can trough it with a fork and chewing issues are avoided by fussy DS2. Add frozen peas to the milk and cheese on top of mash if feeling decadant.

We had some frozen fish fillets and last night I put it in an oven tray, with onions, butter, seasoning, and piled on top with slices of potato, and topped off with LOADS of cheese. It was great!
  • Due to OH scoring a couple of times with 'whoopsies' on the way home from work I have quite a bit of oddments of fish.

I haven't a lot of experience cooking fish. To be honest half of the family is vegan/vegetarian and the other half not overly fish mad. But I know someone here knows how to make it taste delish without costing a bomb or too much fuss. Would be interested in any OS fish recipes and recommendations.

    TIA:)

Keep it simple. Just poach it?

    POACHED FISH

    Serves 2

    INGREDIENTS

    2 x 250g of white fish
    1 onion
    250ml of milk

    METHOD

Rinse the fish under cold water. Remove any excess water from the fish with some kitchen paper. Run your fingers along the fish and remove any remaining small bones with your thumb and forefinger or a pair of tweezers.

Peel the onion and chop it into tiny pieces.

Put the fish, milk and onion into a frying pan on a medium heat. Cook for 10 minutes until the fish is firm and opaque.

Remove the fish from the pan.

    ADDITIONS AND ALTERNATIVES

Add a bay leaf. Remove it afterwards.

Or use the poached fish in a fish pie?

    FISH PIE

    Serves 2

    INGREDIENTS

    1 quantity of poached fish
    1 quantity of white sauce
    ½ a tablespoon of parsley
    1 quantity of mashed potato

    METHOD

Strain the milk from the poached fish through a sieve or colander into a bowl. Put the fish and onion onto a plate. Break the fish into small pieces. Throw away the skin and bones.

Put the fish and onions, white sauce and parsley into an ovenproof dish. Mix thoroughly.

Level off the surface. Put the mashed potato on top. Spread to cover the fish mixture.

Cook in a preheated oven at 200°C, 400°F, gas mark 6 for about 30 minutes until golden on top.

    ADDITIONS & ALTERNATIVES

Use some smoked and/or dyed fish.

Use kippers, which are smoked herrings. Cook them according to the instructions on the pack.

Use 100g of frozen cooked prawns instead of 100g of the fish. Defrost them according to the instructions on the packet and add them to the fish mixture when you assemble the pie.

Add a chopped hard-boiled egg to the fish mixture when you assemble the pie.

    TIPS

Use the milk from the fish to make the white sauce.

  • If you've got the spices for it already and your family like curry, fish curry is pretty awesome.

I personally love tandoori salmon or masala white fish which if you want any recipes, give me a shout.

  • I make a fish chowder that generally goes down well, and can go a long way. You need sliced leeks and carrots, soften them in a little oil and then add in garlic and herbs/seasonings, boiling water and a couple of fish stock cubes. Put in smoked cod or haddock, skin side up, and poach gently until cooked, take the pieces out and leave them aside until they're cool enough to flake. Add in chopped potatoes and let them cook in the liquid. While they're cooking, flake the fish (this also means that there will be no bones) and when the potatoes are done add in the cooked fish and a small tin of sweetcorn to heat through. At this stage you can also add in prawns if you like them.

The smoked fish gives a lot of flavour, but I've also done this with a mixture of smoked and unsmoked fish.

    Morning one and all.
It's almost the end of the month and I have literally only a few pounds of my budget left for milk and fruit etc. So I need to use up what I have in the freezers and cupboards. I have a bag of frozen white fish fillets, pollock probably, but how can I use them so they are tasty?
Last time I just battered them and did fish and chips but really need a dish that I can give my dh to reheat in work tomorrow. I remember that they are a bit wet and a different texture than fresh so what is a good way to cook them?
I'm not a lover of something too fishy and the thought of a fish stew fills me with horror for some reason!
