  • Hello,

Wonder if any of you could help me with a couple of cheeses I have left from my christmas cheese board - they are vacuum packed and although dated 6th January, they are fine. The cheeses are wensleydale with cranberries, and innkeepers choice? - I haven't cooked with anything other than Mozorella, chedder and feta, and I'm not sure what these would be good for using in-so I was wondering if anyone has any suggestions because I can't cope with anymore cheese and biscuits !!

    Thanks in advance

ps I hope one day to be able to help others as you help me, as I only ever seem to ask for advice and not be able to offer very much - sorry !

Does this appeal? Scroll down for the recipe.

    Or this?

Or this? You need to scroll quite a long way down to Roasted Vegetables with Wensleydale & Cranberry

    Hope these offer some inspiration.

Edit: PS just noticed that if you scroll further still down the last link you'll find Pear and Pecan Salad with Hot Cheese Dressing which also uses wensleydale with cranberrys.

After christmas, i always use up the extra cheese in a cheese sauce, either with pasta or vegetables.

  • The wens. and cran. is gorgeous, if you have a french stick going to waste, slice it up put a slice of the cheese on top and melt it in the oven, lovely!!

Oooooo I love Wensleydale cheese with christmas cake, but even better if it has cranberries in it :D

I've never actually cooked with it as it never lasts that long before it gets eaten for nibbles anyway ;)

In a similar vein, does anyone know what i can do with a block of white stilton with apricots and a block of white stilton with cranberry? My mum bought them for me for Christmas but i'm not that keen on the taste of them "raw" :(
