    i have left from the xmas cheese board loads of cheese. i could quite easliy just eat them with cracker every day. but was wondering if there was anything more i could make from them.

    wenslydale
    wenslydale and cranberries
    lancashire
    red lesicter
    white silton and apricot's
    boursin
    catherdal city ( which i buy generally anyway . i use this for cooking all the time)

    i often stuff chicken fillets with cheese then wrap in bacon.

    alot of them are date for some time in jan. i think the bous=rsin is date for march tho and cathdrel city is june.

    could you not wrap and freeze it not sure if you can do this once its been opened,but if you can would save wastage,not that any cheese goes to waste in our house,i have similar left over to you but it wont take us long to get through it as im a cheese-a-holic :)

    I've just had baked bried with cranberry sauce for dinner - absolutely gorgeous :D

    As CFC said you can have baked brie with cranberry sauce - or without. Either bake it in wooden box, or in tinfoil until melted through and serve with crusty bread for dipping in (this is where the box comes in handy).
    Or, toss in flour, beaten egg, breadcrumbs, then shallow fry or bake and serve with cranberry sauce (or some other kind of fruit preserve).

    Your fruit cheese.......you can stuff into chicken or pork. As you normally wrap in bacon, you can also use some cold meat (thin ham or something of that ilk), coat in breadcrumbs and shallow fry.
    Or grate or crumble some on top of a gammon steak and grill for a few seconds until melted.
    Would also be nice stuffed into peppers or chillies. (The boursin would be good here too).
    Actually, I would use any of the cheeses you have for the above.

    If you make pizza, you can do your own 4 or 5 cheese toppings.

    Boursin is great for mixing with greek yoghourt or mayonnaise for a herby dip - just mash it all together.
    Use some boursin and some cream, mix together and gently heat through and toss in some hot spaghetti or some other pasta.

    Your other cheeses - Wensleydale, Lancashire and Red Leicester - treat them as you would your normal cheddar. Make cheese sauce, macaroni cheese, toasties etc etc. Crumble or grate on top of pasta dishes.

    If you still have some Christmas cake, have a chunk of Wensleydale or good mature cheddar with that - it it delicious, honest!

    I have some stilton left, was wondering if cauliflower soup with stilton crumbled into it would be ok, have heard of broccoli and stilton but not cauliflower!

    Soups are a great idea - cauliflower/brocolli and stilton, brie and courgette mmmmmm

    Definitely go for it, it is delicious, as have done this myself when had cauli needing used up. Have also used cheddar when I didn't have stilton, different taste obviously, but lovely and tasty.
    Another good soup with cheese is home made minestrone, doesn't have to be parmesan, use cheddar or any other cheese you can grate.

    I must admit I dont bother with soup recipes now, after all its only cooked veg, seasoned and blitzed. Just found a cauliflower soup recipe but wont use cornflour like it says, will add some diced potato instead. Then use my stilton up, looking forward to it! Thanks for your help.

  • Hi guys, I had lots of great tips for doing a buffet for my sons christening last week which I fully appreciated and took on board.The buffet was a great sucess but I have about 3lbs, of hard cheese left over.We have had cheese toasties until they are coming out of our ears, I would like to make a cheese and potato pie with a crust (like I used to have at school) but im not a great cook and need a recipe can you guys help, im told you wont let me down!I dont want the cheese to be wasted, ps ive grated it all .

    only ever cooked leek & potato pie which had a cheese sauce.. I cooked the leeks & pot together in water, strained & poured over the cheese sauce (in the pie case) not sure if that what you meant....
    You can freeze grated cheese well though if thats any help!
    I THINK is a whole sentence, not a replacement for I Know
