    Mmmm just had some raisin bread from the panny recipe book and it is gorgeous, gotta get making all the standard loaves to pick my fave :D

    DH now wants an automatic slicer :rolleyes: as he can't use the manual one we got a few years ago!

    I ordered a Panny from Amazon last week but they won't deliver till the 10th of July at the earliest.

    Here we go ladies, the fruit berry cake mix ingredients and instructions. I will list what the book says and afterwards, I will add what I do as I change a few things but basically you get the same result.

    200gm/7oz raspberries
    175g/6oz butter, softened
    175/60 caster sugar
    3 eggs beaten
    175g/6oz self-raising flour
    50g chopped nuts

    1. Line the pan with parchment paper.
    2. Chop fruit ready and set aside, likewise with the nuts.
    3. Cream the butter and sugar in a mixing bowl until pale and fluffy
    4. Gradually beat in the eggs beating well after each addition to combine quickly without curdling.
    5. Mix in the flour and the ground nuts.
    6. Fold in the fruit.
    7. Set machine to bake for 50 minutes
    8. You may need to bake for another 5 minutes if the teabread is still sticky.

    Now as I said earlier, I changed a few things because I didn't want to add that amount of butter and sugar so I tweaked a few things and this is what I do:

    1. instead of butter, I add 85gm/3oz of vegetable oil
    2. I don't put no where near that amount of sugar, I just add 2 tablespoons of brown sugar
    3. I only use 2 eggs

    Instead of raspberries I buy the frozen mixed berries and just use as many as I want, same for the nuts. I use chopped walnuts. Keep berries in freezer until last minute - you don't want them to start going soft before going into the mixture.

    Now that I've butchered the ingredients :D this is what I do and it's worked everytime and my family love it:

    1. Place parchment/baking paper in pan
    2. chop nuts so they are ready to add.
    3. In the mixing bowl mix-up the sugar and oil
    4. Beat the eggs and then add these
    5. Mix in the flour and then the nuts. If the mixture is a bit too stiff, you can add some milk but don't make the mixture sloppy or runny. The consistency is quite thick and stiff.
    6. Get the berries out and chuck in as many as you want and fold them gently in the mix.
    7. Bake as above.
    8. You can always sprinkle on some nuts on the top if you like before baking too.

    Leave the cake in the pan for about 5 minutes before removing.

    I hope they turn out ok for you. The mixture can be a little sticky and thick when going into the pan (it shouldn't "pour" in). Just spoon it in and sort of spread it.

    Here you go: This is what it says in my Panasonic book:

    Program is Whole Wheat Bake Raisin (5 hours)
    Size: L
    Yeast: 1tsp
    Strong wholemeal flour: 250gm/9oz
    Strong white flour: 225gm/8oz
    Honey: 2 tablespoons (more if you like)
    Butter: 25gm (I just add 1 tablespoon on oil)
    Salt: 1tsp
    Water: 320ml (as a matter of course I always use 20ml LESS water in all my bread recipes)
    Sunflower seeds: 4 tablespoons (however I use pumpkin too) - again you can add as many or few as you like.

    I hope they turn out ok

    My local baker told me that he never washes out the bread pans....so, for the last week I have tried not washing my bread pan out. If there are any crumbs I dust them out, the mixing blade stays in place and as I bake a loaf every day there is no time for any mould or anything.
    What do you think? Would the non-stick be preserved longer through not washing??:confused:
