What I've done is to cut down on the salt/sugar/oil, little by little to see how far I can go without the quality of the bread deteriorating.

I have cut down on both salt and sugar in each loaf I have made and we think they taste fine. I now only ever use half the amount stated in the recipes. Don't know if I could reduce it any more though. Anyone tried any less than this?

I only use half the amount of salt but still use the full amount of sugar, i was a bit worried that the yeast would not work properly if i cut the sugar down.
I don`t think that the amount of sugar is too bad though compared to a shop bought loaf.

    my beautiful Panny is fine!

The Asda yeast is in the bin and a perfect loaf made with Hovis yeast is sitting on the wire rack cooling in the kitchen.

    Hi Sunnyday.
Just reporting back on the Asda yeast situation.....I have made a loaf with my Asda yeast now and it looks just the same as the one I made with Hovis yeast and has risen well. I haven't sliced it yet, so I suppose it could be full of holes, LOL. Maybe you were unlucky and had a duff batch?

Every loaf from my beloved machine has been lovely. My personal favourite is 50/50 white/wholemeal.

Oooooh, the 50% wholemeal is my favourite too :) The last two loaves I have added sunflower, pumpkin and poppy seeds to and used honey instead of sugar and they have been delicious - yum :)

Just got back from Sainsbury's and Doves Organic Strong Wholemeal was 60p a bag. I got 2!
  • The milk powder is just to add vitamins, to make sure you don't miss out on them when switching from shop bought bread, which is normally fortified. It doesn't improve the loaf in any other way.

Adding milk to bread usually gives a softer crust, does with HM bread but I don't have a BM.

    Thanks Jo_anne,
it probably was a bad batch then as mine was just like a house brick, i still daren`t risk it and will carry on using the HG/Hovis yeast though :D

Panic over, i was really scared that i`d overused the Panny as it`s on at least once a day lol

Is it bread flour? I ask because I was not aware they did Smartprice bread flour, they do Asda own label [blue bag] bread flour which I found OK but not used it for a while as I now use Lidl

If it is Asda could be they have been cost cutting & using inferior grade like Tesco have, maybe it even comes from same mill?
