they might crumble on thawing but if so, you could use them for topping ice cream or stewed fruit. You can freeze the dough though.

If using frozen veg for soup or casseroles, no need to defrost first, just cook from frozen.

You can freeze anything you like; the only problem comes when you try to defrost lettuce

Whilst on the topic of freezing celery (which I know is fine). Soup season is coming up soon, and I often freeze batches of what I make. I'm going to try and make celery and stilton soup. Would this be ok to freeze? I know blue cheese is a bit of a funny area. Cheers in advance.

I tried last week to ripen 2 green peppers on a sunny windowsill. They started to go mouldy before any change in colour. Rather than waste them I chopped the good bits and stuck them in the freezer.

it should be ok - after cutting into pack-of-card size, I freeze the cheese as we always get some leftover from the Christmas cheeseboard as not many of our family eat it. I then use it for soup as and when I need it.

I freeze it without problems It may look a bit curdeld when it's defrosted, but will be fine once it's warmed up and stirred.

Can I freeze Creme Fraiche??? Mr T only had big pots the other day and I hadn't got the mental strength to re jig my meal plan...... With hindsight I should have just bought cream instead.....

Oh and where can I get those foil containers with card lids on? I want to be able to make and freeze individual portions of lasagne and shepherd's pie etc and bang them straight in the oven to defrost and brown, rather than having to transfer them from a tupperware. I have some oven and freezer proof crockery but don't want that all living in the freezer, and it wouldn't stack well either.

like cream, creme fraiche separates on thawing - but I freeze cream and use it in soup and when warmed it doesn't seem to affect it as much, the grains melt.

the containers can be bought from major supermarkets.
