Not reallym it will go squidgy. What happens is that the water in the fruit expands as it freezes and breaks down the cell walls in the fruit. Some fruits are worse than others for this, but high water items like strawberries and melon are particularly bad.

  • You could try making a cooked fruit salad with apples, pears, apricots etc. Cut into pieces and microwave with minimum of liquid until just tender. This will keep for a while, but I'm not sure about a week.

Or, make stewed fruit, which is still nice cold. This will freeze. If you put it into small lidded pots as soon as it was cooked you could take one out each evening for the next day

  • You can freeze it, but as for defrosting that's a different matter:D It will go mushy I'm afraid.

I often make a huge bowl of fruit salad using a mixture of fresh and tinned fruit in juice. It keeps well for about 3 days.

I agree with Patchwork Quilt, stewed fruit is a better option. I've got a bowl of stewed rhubarb in the fridge at the moment-delicious, but I'm the only one who's eating it:rolleyes:
  • Hi all

I cook mine first, so that they can just be warmed up from frozen, rather than having to put the oven on to cook them through.

I warm mine at gas 2 for about 10-15 mins.

  • I have a fresh pomegranate that I like to take to work for lunch with HM yoghurt. I won't eat the whole one in one go. If I freeze it, what's it like once it's defrosted

  • I made too much pasta for lunch so was wondering if I could freeze it for lunches etc? If so, should I heat it up quickly now and add some pesto etc for moisture and then add other stuff after its defrosted? Thanks

Is it okay to freeze some concentrated fruit juice I have - in its glass bottle? I've used a bit of it - so there's room for expansion so to say...

I've heard that freezing glass containers can weaken them so that they occasionally crack when returned to a warmer temperature and thaw out, although we have occasionally frozen small jars of things like pesto in the past. It might be safer if you could wash out a plastic milk bottle and freeze it in that.
