Thanks for your quick reply.. the use by date was 18th October 2008 and was bought fresh then frozen before then. So it will be ok to defrost and use?0

It depends upon the freezer. Is yours a 'proper' freezer - i.e. 4 star? If so it should be totally fine.

I am doing the catering for a surprise 60th and seen a fab gordon ramsay receipe for a pork and ham pie. It doesn't mention whether it can be frozen and it would make my life a lot easier if it can be.
I've seen a similar question before (ordinary pork pie) and opinion seemed to be divided. I think ,centered around the pork and how long you had to recook to make it safe. If you cook it long enough to heat it thoroughly, some thought the pastry would be overcooked.
Personally, I think the sage might be soggy and not sure how the gelatine would freeze either.
I think justpeyton4now's idea of giving it a trial run is a good idea.0 -

had a £5 voucher (result of a complaint) and it finishes today so ended up buying Philly on special offer (which means quite a few packets!). Don't like it in pasta sauces but can you actually freeze the tub of Philly and then defrost slowly in fridge to use as 'normal' Philly? Anyone tried this?0 -
Don't know about freezing it 'raw' but if you whip it up with icing sugar, lemons and lemon zest it makes a lovely 'lemon cheesecakey' ice-cream, nomnomnom:D

yep, once made, it keeps well for 3 months in the freezer, sounds lovely, post how you get on?;)

I've successfully frozen it :j When you defrost, a small amount of liquid can separate. You can discard this, or just mix it in
I'll add this to the freezing QQ thread.
