The most simple cream cheese recipe I know is this:
1 cup sour cream
2 tbsp natural yoghurt
pinch salt
Mix everything really well, lay a cloth (muslin, hankie, teatowel) in bowl, pour the mixture in. Tie up the corners and hang over the bowl for 24hrs. I hang mine from a kitchen cupboard handle. After 24 hours pop the cheese in the fridge for an hour or so to firm up and that's it. This makes Boursin/Roule style cream cheese, I add chopped garlic chives.

I couldn't watch the video as I have no sound on my pc anymore - small price to pay for bringing it back from the dead! I make my own ricotta - very simple just full fat milk and white vinegar - google it if any one wants to try and pick the simplest recipe out of the lot. If the milk is whoopsied its very cheap to make.Clearing the junk to travel light

Hi all,
So I've recently been thinking it would be nice to make cheese at home. Mainly interested in soft cheese atm as I believe that's much easier.
Anyone have tried and tested methods to share??

i have made Paneer before (the cheese used in indian cookery) it was very easy. I make it when i see reduced full fat milk.
i think you can also make ricotta and even mozarella at home...
let us know how you get on..

Do you have to use full fat milk for all of these or can you use semi-skimmed/1% fat milk?2021 Targets
