  • The most simple cream cheese recipe I know is this:

    1 cup sour cream
    2 tbsp natural yoghurt
    pinch salt

Mix everything really well, lay a cloth (muslin, hankie, teatowel) in bowl, pour the mixture in. Tie up the corners and hang over the bowl for 24hrs. I hang mine from a kitchen cupboard handle. After 24 hours pop the cheese in the fridge for an hour or so to firm up and that's it. This makes Boursin/Roule style cream cheese, I add chopped garlic chives.
As for hard cheese try this..http://www.downsizer.net/Projects/Processing_food/First_Steps_In_Cheese_Making/
I've just made my first batch of cheddar...will be trying it in October:j

I came across a website earlier and thought it might be of interest to OS'ers that want to try their hand at making their own cheese. It seems quite comprehensive and there are a good selection of cheese recipes to choose from as well as a variety of other useful recipes and tips :)

I don't think I could be bothered myself but this could be of interest to those of you who may want to give it a try.

I couldn't watch the video as I have no sound on my pc anymore - small price to pay for bringing it back from the dead! I make my own ricotta - very simple just full fat milk and white vinegar - google it if any one wants to try and pick the simplest recipe out of the lot. If the milk is whoopsied its very cheap to make.

    Hi all,

So I've recently been thinking it would be nice to make cheese at home. Mainly interested in soft cheese atm as I believe that's much easier.

Anyone have tried and tested methods to share??

  • We've not tried this yet, but hope to one day :) As this has fallen from the front page of OS, I'll add it to the existing thread to give you more ideas.

  • Worryingly, I'm very excited about this! :o

OH is away in a couple of weeks, been looking for a project to keep me out of mischief - think I have found it :D
  • I feel inspired to have a go at some cheese-making too after reading this thread. :j

Do you have to use full fat milk for all of these or can you use semi-skimmed/1% fat milk?
