The best book I've read on the subject is Yorkshire Television's Farmhouse Kitchen, written by Audrey Ellis. (Not to be confused with the various recipe collections they issued under the same name.) Can I ask a few questions please:
1 - Can I use lemon juice instead of citric acid?
2 - I don't have a microwave, can I make it in any other way?
3 - I also don't have a thermometer, is it vital to the result?
4 - I have liquid vegetable rennet, how does it compare with rennet tablets for amount to use?
