    The best book I've read on the subject is Yorkshire Television's Farmhouse Kitchen, written by Audrey Ellis. (Not to be confused with the various recipe collections they issued under the same name.) I'm not a cheese maker, but that book explains everything clearly.

    What's a Rennet tablet ? And cheese salt, is that different from ordinary salt.

    They have just started selling vegetarian rennet in Lakeland. There is a section in their new catalogue about making soft cheeses at home.

    You can get vege rennet in Sainsburys, near the home baking section.

    There is a homemade cheese thread here with all kinds of info and ideas. In particular, this post documents my first attempt at making mozzarella.

    Can I ask a few questions please:

    1 - Can I use lemon juice instead of citric acid?

    2 - I don't have a microwave, can I make it in any other way?

    3 - I also don't have a thermometer, is it vital to the result?

    4 - I have liquid vegetable rennet, how does it compare with rennet tablets for amount to use?
