    Hi Elljay20, I'm sure there are nicer recipies put there, but I make mine up with cooked potatoes, chopped chives, and then equal squirts of mayo and salad cream. Mix it all together and taste. Then I add more mayo or salad cream depending if I want it more tangy or creamy...

  • My husband makes a great potato salad and his top tip is to add the mayonnaise when the potatoes are still slightly warm. He also adds chopped spring onions and black pepper. Any left overs can be put back in the fridge and used for 2-3 days.
    Now debtfree except for the mortgage!

    Not really a recipe as I can't give you quantities. I peel and then cube the potatoes and put them on to boil. While that's happening I put mayonnaise and some very finely cut onion or chopped chives and a bit of garlic if you like in a bowl. When the potato is just cooked (don't over do it or it all breaks up to a mush) I strain the potatoes and put them straight away still hot in the bowl of mayonnaise and onion. Stir it around so that it is all coated adding more mayonnaise if necessary and let it cool. Putting the potato in hot makes it much easier to coat thoroughly. I find it's easiest to adjust the seasoning when it's cooled. It also seems to improve if kept overnight in the fridge if it lasts that long!

    it's an aquired taste though,

    I had some yummy potato salad with German sausage when I went there on holiday years ago, please post the recipe it's nice to have a change.

    I don't put salad cream in potato salad, just chopped up new potatoes boiled in their skins, lashings of mayo, freshly ground pepper and chives. I put them in the mayo whilst warm too;)
