For my pototo salad i use mayo and also stir in some wholegrain mustard........tastes delish! Everyone loves it and when ever there's a bbq and people are ask to bring something, i always seem to be volunteered to make the potato salad............ Try it, it's lovely... :drool:0 -

I like with spring onions and chives... normal onions is a bit strong. And def mayo, but it's down to what you prefer really - try both!!0

potatoes, dash olive oil, spring onions, chopped carrots, green peas, salt, fresh ground black pepper, dash of hot pepper. Some mayo if I'm feeling thin on the day.
I also make variations with chicken, tuna, whatever.0 -

Very simple recipe, new potatoes boiled for 20 minutes and left to cool, couple of gobs of Hellmanns, and a couple of chopped spring onions - although this sounds more overpowering than chives it's a marvellous combination.0

At last I have found something (reasonably) healthy my so will actually eat. on a short break last month I discovered him EATING POTATO SALAD from a food emporium. I almost passed out in disbelief. To add to the confusion he has asked for it again.
any advice on making potato salad most appreciated.

lots of ideas:
Some find all mayonaise too rich so add some salad cream!
Make sure you get a 'waxy' variety of potatoe
spring onions, go well or fresh chives if you can get them with salt and pepper is all you need for a basic potatoe salad.
a nice combination is celery cashew nuts and dried apricots!!! for something a litle different

Best use new potatoes, cut them into quarters (or bite size chunks), and boil til tender. Then put into cold water to call. Then add mayonaise and stir. Hey presto, potato salad. You can add sweetcorn, chopped peppers, onion, spring onion, chives, mint, salt, pepper to vary the taste and texture, dependent of course on how your son reacts to eating these things.
