So anyway I've looked thruogh the thread but I can't find why you all seem to use UHT milk, is it because it's sterilised? And why do you add extra milk powder?

UHT milk because you don't need to heat it up and let it cool to the right temp. It's already been heated ;) just pour it straight in your container (I use an electric yogurt maker).

Powdered milk (value dried milk) because it is concentrated milk and the more milk concentrates you have, the thicker your yogurt. I use half a cup to a litre of milk.

2 tbsp of live yogurt, or 2 tbsp of your previous batch if it isn't too old.
half a cup of dried milk
1 litre carton of UHT (I use whole milk)
In a yogurt maker overnight = 1 litre of really thick creamy yogurt :)
  • Will my yoghurt still be thick if I use skimmed milk instead of full fat????

Want mine to be a low fat yoghurt now.

    Ta!

Did it!! And it was fine!!

  • Idealworld have a yoghurt maker as they pick of the day but also lots of different flavour 10 sachets for 14.99 They aren't easiyo but they say they can be used the the easiyo system. Does anyone know if they are as good as the easiyo. I like the sachets as last time I tried the other way it didn't set just went like egg whites.:rotfl:

Another question about powdered milk: How does it affect the fat content, is it mainly milk protein? I've never looked at the stuff.

I made my first batch of yoghurt with the out of date sachets I was given and it set a bit but is more like drinking yoghurt and does still have a slight lingering powdery taste IYKWIM - I haven't taken very much of it!

Powdered milk is skimmed (at least I've never seen any other kind). Don't forget though that whole milk is not a high fat food. It's fat content is only around 3-5% :) You need the fat in milk to absorb the calcium and vitamins in it ;)
  • Can anyone help me? I am at my wits end. I have been using an easiyo yoghurt maker and sachets for approx 4 months. I make approx 2 per week. They have always turned out really well . Well for the last 2 weeks they having been setting at all but I am not doing anything different. I have wasted 5 packets of yoghurt already. Any ideas?

Are the packets all the same batch? I'd take them back to the shop.

I'm a complet newbie at this but I'd suggest that the container should be sterilised with milton or similar between batches as you don't want to build up a culture of the wrong type of bacteria- which may be outcompeting your good bacteria.

BTW does it still smell yoghurty or what?

  • I have read the whole of this thread with interest and have a few questions if anyone can be so kind as to answer them for me.

-Does the milk have to be boiled?

-Is it possible to use live yogurt in the easiyo system (I rang Lakeland up and the sales assistant says it is not possible)

-Is it best to use UHT milk?

sorry to appear dense but I don't want to poison everyone!

    Thanks DH

Using live yoghurt doesn't generate any sales revenue for Lakeland!, but you can use it sucessfully see thriftlady's post above ;)
