Thanks guys for some of the ideas. I decided to freeze them for now as I wasn't feeling adventurous but some of those ideas were great.

I couldn't bear to throw them away as even at half price I thought they were terribly expensive.

Just bought a small punnet of fresh raspberries and was wondering what I could do with them? Usually I just make meringues and serve them with cream and the rasps, but am looking for inspiration.

Does anyone have any pudding ideas please?
    Thanks in advance :)

    Hiya :)

We have an older thread on using up raspberries that has some ideas you might like so I've merged your post into it. Since posts are listed in date order you'll need to read from the beginning to catch up with us all :)

There are also some fruit fools recipes you could adapt in the Sweets section of our main Recipe Collection.

I'm getting a steady supply of raspberries and tayberries from the garden this year and I can't seem to keep up with them. I never get enough to make jam. Anyone got a cunning idea or two for me?

Put them in a jelly? Put them inbetween the layers of a Victoria sponge with fresh cream? I tend to make a biscuit base, add some Angel Delight and press fruit into the top before it sets.

What we're doing is freezing the excess each day so that in a week or so we should have enough to make jam, as you can make it using frozen stuff (might need to add some lemon juice to help with the setting).

Have them at breakfast, on cereal.

Turn them into icecream? I don't have a recipe but I'm sure someone will!

i dont have a great many rasp bushes but i pick anf freeze daily till i have enough for jam, or this recipe i have posted before but have found the more up to date on using sugar with pectin
    freezer rasp jam
    750g fresh rasps
1kg jam sugar with added pectin
    2tbsps fresh lemon juice

mash rasps with potato masher in a bowl, add sugar and lemon juice
cover with cling film, heat on medium about 5 mins or ill warmed through
uncover stir gently leave to stand overnight
pot into freezer containers, not too big, once taken from freezer keep in the fridge
its lovely and fresh tasting esp with vanilla ice cream, sponges or scones

Cheers for all the suggestions guys I'm going to try some of them out this weekend as I'm overdue another harvest.

I did make some really nice Raspberry and Tea muffins last night and they were surprisingly good.
