What can I do with raspberries...

    I made some lush cakes with strawberries the other day - but I think rasberries would've been nice.

    Made a mix for fairy cakes as usual then added the fruit and some diced white chocolate. Cooked as normal - lush.

    That's what we've just eaten for pud, but with strawberries as well as rasps - and without the meringues:D

    This year I am inundated with raspberries, I think because I cut back all the shoots a couple of years ago so I've gotten what should have been last years raspberries this year. I made a batch of raspberry muffins a couple of weeks ago but with about six full sandwich bags full of raspberries there are only so many muffins I can eat (although work were really grateful for the extra muffins I took in :rotfl: ). I'm stuck with what to do with so many raspberries. It is only me that likes them as hubby doesn't really do fruit, although he did try a muffin but told me that the muffin was nice he just didn't like the "red bits" :rotfl: .

    Anyone have any ideas what I can do with them. I am just freezing them until I decide what to do with them, even if it is to just make huge batches of muffins.

    A great desert is whipped cream, fold in the raspberries and some broken ammaretti biscuits, then top with raspberry couli and some more raspberries........mouths watering thinking about it, but guess what I don't have any of :( Another option is chocolate mousse, pieces of chocolate brownies and raspberrys. Then of course the 'be good' version using yogurt

  • My crop is just getting started and I still haven't dinished all last years !! I freeze them, they are really good to make a raspberry flan. Just put frozen raspberries in a (bought in my case) flan case, make quick gel and pour over. Makes a very quick easy and immpressive looking pudding when you have visitors.
    I am hoping to get enough all at once this year to make jam. The only problem is I tend to have about half a pound a day not enough before the fisrt lot go a bit soft.
    My cousin made a nice pudding it was raspberries put through the food processor with some sugar then mixed in with whipped cream. It was very tasty, but very fattening.
