What to do with bacon offcuts

I make bacon and egg fried rice - pack of savoury rice, cook it up, then bung the bacon in the wok, fry it till crispy, add in the rice, two beaten eggs and some chinese five spice and soy sauce - fry it off till the egg is all nice and cooked - it's tasty.
Also - fry up some bacon bits, and boil some new potatoes, then put it all in a baking dish with some onions and garlic, spread cheese over the top and bake for about 15/20 mins.My sig's too large, apparently - so apologies to whoever's space I was taking up.:lipsrseal0 -
Idiot Husband defrosted ALL the bacon in the freezer and we've been eating it for three days in a row!
On Saturday we had the bacon toad in the hole, yesterday we had the bacon/onion/potato hotpot. Both were really nice0 -

cut it up and make lovely soup with whatever vegetables you have. Brown the bacon, then add whatever fresh veg you have - onions, potatoes, leeks, carrots, swede, whatever you have. Any frozen or tinned veg can also be added later. You can used dried beans as well, but cook them according to the packet directions first, and add later. Only excption is pearl barley or lentils, which you can add at the same time as the raw fresh veg. When your veg are soft, add tinned tomatoes / passata / tomato puree and water / stock or a mixture, to make a decent panful, and cook gently till all veg are soft. Then add any tinned/frozen veg, cooked beans as above etc. you can literally put most things in this, and it is always good. Stuff left over in the fridge is fine. Cook a few more minutes, till consistency is how you like, then serve with crusty bread.0

thickly chop some veg, peppers, onions, spring onions etc and throw into a roasting tray type dish, add a bit of oil and season.. throw the bacon in and cook till done. I use normal bacon when i do this and serve it with cajun roast potatoes (sprinkle cajun rub onto the potatoes before roasting them)0

fry along with any odds and ends of veggies that are lurking in the fridge - onions, peppers, broccoli and courgettes are my faves - and pour over beaten eggs to make a frittata. If you have any cheese grate over the top and pop under the grill.
