What to do with bacon offcuts

tomato and bacon pasta - and variations on it - is a good one to do with bacon bits.. just use an onion, a pepper, can of plum tomatoes, bacon bits and lots of mixed herbs. you could add any other veg you like, like courgettes, aubergines, beans of some kind (whether french beans, cut up or cannelloni beans for example). oh, and lots of garlic, too, of course!
just saute the onions gently in a little oil, then add the bacon bits and chopped pepper and all other veg, put the lid on and saute gently for 5 to 10 minutes. Put the plum (chopped) tomatoes in, some mixed herbs and reduce to make a sauce. Serve over cooked pasta. you can add cheese too if you like.
One variation that my OH likes is lots of chilli being added - whether whole chillis that i've chopped up or chilli from a jar (like sambal), you can add whole ones (not chopped up) if you just want to add a little bit of heat, through to lots of chopped up ones/big dollop of sambal from a jar if you like it really hot like my OH does.

Most of my left over are usually eaten in a quiche with a side salade.
I use a ready made puff pastry, a medium pot of cream with 3 eggs beaten in it, salt pepper and add what I have at end (bacon, sliced sausages, the bits picked from a roast chicken, fish, tomatoes, grated cheese, green vegs ect...) cook for 35/40 mn at 210 and voila!

We have this regularly for cheese and bacon potatoe skins.
Baked pots scoop out flesh, mix some flesh with cooked bacon lardens and cheese, pop back into skins then under the grill for a minute or so.0 -
I've got a package of bacon ends and pieces from the butcher in the fridge, a bit fatty but nice. What can I do with these for tomorrow's dinner? There is probably about 400g or so and I've got a fairly full stocked cupboard.
Grateful for any and all ideas!0 -
