What to do with bacon offcuts

Hi all,
Been doing a freezer inventory and found a few packs of bacon mishapes. Packs too large for one meal - even for us, lol.
Not much room in the freezer, so can't use the bacon as an additive to something like a batch cook bolognese.
Can I defrost, cook the bacon and refreeze what's left in more convenient portions, so that I can use it as a topping for pizza or to add to other dishes?

Yes, no problem, as long as you cook it through completely before re-freezing it.0

I just had to share this because it made me giggle.
Went to Mr S and picked up cooking bacon. I've bought it a couple of times when OH wasn't there but today OH was there. He was very not unhappy at the cheap cooking bacon I'd snuck in to the basket.
Persuaded him, got home. Well, usually there's enough rasher for two bacon sandwiches plus lots of cooking bacon. This time there was 4 rashers... and two chunks of bacon the size of which I had never seen!
each looked like a pack of back bacon, but without being sliced. Each piece must have been an inch thick. I have no idea what I'm going to do with them, and may have to go back out for sliced bacon, but for 99p I am impressed!0 -

You can cut them up and put in, quiche, chicken casserole, lardons to go with sprouts or other veg, omelette, egg and bacon sandwich filling, on a jacket potato with cheese and beans.Opinion on everything, knowledge of nothing.0 -

I've just cut the fat/rind off and used it to cook a leftover fridge contents bubble and squeak.
I did consider cutting them up for normal lardons etc, it just seemed such a shame when they're such lovely chunky pieces.0 -
i slice up cooked potato and fry til golden add cut chunks of bacon into manageable bite size pieces and spring cabbage and fry them all until crispy...amazing!!!:jYesterday is History, Tomorrow is a Mystery, And Today is a Gift, That's Why it's Called The Present

You can cut bits off the chunks and add to your mince when you make a spag bol.

I like the 1.5kg packsof cooking bacon from Lidl, they are usually about £1.49 and always have good bacon in them, sometimes it's lots of rashers or little bits (great for bubble and squeak, soups, casseroles etc), but mostly there are huge chunks in there! Boil them up in a pan of water for an hour, add potatoes and vegetables to the pot if you like for a one pot, or just do the bacon on its own.
