The kind with liquid in it won't freeze as well as the danish 'pizza' mozzerella, as it's not got as high a fat content and it'll probably go a bit watery when you defrost it. Personally I'd try to avoid freezing it as far as possible ...
  • Thanks for the replies. I didn't realise how often this question had come up, looks like we're all on the same wavelength!

I freeze cheese (although not mozzarella) but I think it would probably be OK. Perhaps you could test with a little bit before bunging in the whole lot if you don't want to risk it.

Cheese freezes well as long as you're going to cook with it. I wouldn't eat it defrosted on crackers for example.

    Hi,
I just managed to get some lovely mozzarella reduced in waitrose (the stuff in tubs in water, from italy :D) which is use by today. Now I have used it past its date before, and am quite happy that the date is pretty much ignorable-but I got 4 tubs, so have more than would usein an average 2 weeks or so-will it last a month or two or am I best off freezing it? (or am I best off freezing it just to stop OH turning his nose up at it for being past its date :rotfl:)
I keep regular cheese for well past how long it says to keep on the packet, so I don't know why I'm worried about the mozzarella.
  • Yes it goes off much quicker than other cheeses. I have gone to use mozerella on it's date and it has gone off. I try and use it quite quickly.

It freezes, and as and added advantage the OH will never know how close to beyond its date it was ;-)

There was a thread about homemade pizzas earlier this week and talk about freezing it there. I'll see if I can find it ...

Thanks :) I will shove it in the (full to bursting) freezer then :)
I usually freeze in its tub or bag in the water-is that best or do you drain it and freeze dry?
