If i havnt got beer, i use fizzy water (flour, tsp baking powder beer/water). Mind you, i have used yorkshire pud/pancake mix (flour, egg, milk) to make banana fritters before, so you could do that, would just be a bit heavier than normal batter.

Add a teaspoonful of bicarb and use ice cold water to make up the batter.

Hi everyone, i would like to make sweet and sour chicken for tea tonight but i'd like it in a batter, a bit like shanghai chicken if anyone knows what i mean.

I have sweet and sour sauce and chicken but what's the best was to batter/cook it?

Try this recipe, it is an absolute cracker. Takes a bit of time but it's well worth the effort. Flour and egg the chicken twice, (i.e. flour, egg, fry, flour egg, fry) taste better and are crispier, the sauce is brilliant. Serve it up with pineapple chunks drained and some egg fried rice. It's delicious. Try it, it's very good.

Check the reviews for some tips in making batter etc etc, or adjusting the recipe.

should be egg, flour, fry, not flour, egg........

It's a bit of a faff but well worth it. I used chicken pieces rather than the wings, less waste. I didn't have any skin on the chicken either. Just cut chicken into large chunks and use them instead. I wish I had some chicken in the fridge just now, I'd be making it for tea too, haven't made it for ages.

Does anyone have the quantities used when making batter made with eggs? I want to batter 1lb sausages, 8 thick sausages, with an egg batter but it is years from I have made batter and I have never made batter with eggs before so does anyone know how much of each I need?

My local chippy makes their battered sausages with eggs and I thought I would use the eggs I have before they go out of date, save some money and see if I could make them myself!!
