  • I'm gonna make sweet and sour chicken for tea, got a jar lurking in back of cupboard needs using up.

    I was just wondering if anyone could tell me how to make batter so I can make crispy chicken balls to go with sweet and sour sauce.

    I've done it before, I just can't remember how.

    Also, do I have to deep fry or can I oven bake them or would batter just slide off?

    Have a look on the UKTV Food website under Chings kitchen (sorry I cant do links) she makes a batter using cornflour.

    Also she used a wok to fry them in.

    Hope you find it on there.

    I want to do the tattie fritters tonight from the thread a couple of days ago, but putting beer in batter is a bit of a luxury now, so wondered how to make a good thick dipping batter to put the potatoes in?

    I wondered - self raising flour/egg/water?

    or

    plain flour/water/egg/baking powder?

    Wasn't sure the best recipe to do?:confused:

    Nah stick a bit of beer in the batter, it tastes so much better. :D

    There is 1 can of guinness in the fridge that was part of a father's Day pressie from his son, he'd go mad if I used that!!

    I do have some bottles of carlsberg, although the supplies of that are very preciously guarded due to the tight budget this month! I really hate lager, but if it doesn't flavour the batter maybe I'll use one - I used to use lovely posh bottled ale - I used to cook very extravagantly!!

    On a cookery course, I was told that you could substitute sparkling water for beer in a beer batter that was just beer and self raising flour...

    You couldn't really taste the beer in the batter (we used lager), I hate the stuff, and the batter was delicious...

    I'm afraid there's no sparkly water in the house either :(

    I'll use a bottle of the lager and hope for the best - I'd prefer him to have rung and say 'oh it's far too hot for you to cook- I'll treat us to a takeaway'.......oh, look there's a flying pig.........:rolleyes:

    Either of your suggestions will work fine. My dad always makes fritters using a the same batter he makes for pancakes or toad-in-the-hole: Cup of plain flour, pinch of salt, 1 egg, milk. He just uses a bit less milk than usual to get a thicker batter like double cream rather than single so it sticks a bit better.
