EES role out

Greece, and I believe other countries too, have stated that they will not reintroduce EES until it is shown that it will not result in unacceptable queues at airports. I don't think that threshold will ever be met so the whole EES system may end up being dumped.

Although from some of these reports and elsewhere, it doesn't seem to be that bad ?

Yes, that is a possibility.
However I assume there will still be dedicated EU passport only lanes ?

Seville no longer has dedicated EU lanes

Her EU passport didn't work in the e-gates, our UK ones did!

The media will just pick the worst examples. We've been through Schengen borders 8 times since EES and no significant delays except in Nov in the Canaries right at the start. It's quite good that some border screens flash up the number of days you have left, you can also check here:

EU citizens are exempt from EES regulations………..in theory !!!

Don't think it was an EES issue. EU citizens still have to go through passport control when exiting Schengen

Again, coming back from France twice this month, I have had fingerprints and eyes taken. I have been having this done now since November this year. When you do get chance to speak to Border Control in any country, they admit that they don't really know what is going on. However, I have been informed many times that the machines for fingers and eyes often don't save the data, thus having to do it again many times.

It will depend on where you are travelling through, how many other non-EU flights are at roughly the same time, etc.
As an example, Heraklion Airport on Crete is apparently the second busiest airport in Greece in the summer months. It is comparatively small, certainly nothing like Athens, and simply doesn't have the space for sufficient EES machines. We left last Thursday, thankfully using the queue dedicated to UK passport holders. The queue for manual checks of other nationalities was barely moving.
