nothing much is mentioned about direct debits like which type of DDs are acceptable, also confusing statements
To earn cashback in any given month, you must meet both of the following criteria in the previous calendar month:
- Make at least 15 payments using your Chase debit card or your Chase credit card or by direct debit (other forms of transactions, including, but not limited to, standing orders, refunds or bank transfers, will not be counted);
then further below on that link below the table says below
Other forms of transactions, including, but not limited to, direct debit payments, or bank transfers, will not earn cashback.

You are conflating the conditions that have to be met in the 'previous' month with the transactions which can earn cashback in the 'current' month
The 15 transactions DC/CC/DD can be for anything
The 'earning' transactions have to be DC/CC and from the 'valid' list.

Trading 212 charges 0.7% for any debit card deposits once you reach a certain amount.

There is no charge on the first £2000, so even if you did £1 a day it would take 5+ years to reach the limit.

Does anyone know if coffee chains are included (‘cafe’?) like Costa, Starbucks etc?

Costa Coffee is listed as "likely to be eligible" which covers Chase in case you don't get the cashback. They can just say that your transaction was only "likely" to earn cashback, not that it definitely will.

I suppose one issue is you're not going to know until the end of the month whether a particular retailer will earn you cashback due to the fact you need to keep £1k in savings all month, unless it shows as pending as soon as you've spent your money

Check your account to see what they are currently categorised as. I would imagine they are

Just open an account with a savings provider which allows debit card payments if you think you'll struggle to make 15 transactions
