Had the time to do some updates to my MSE KPIs:
- 29 books read of 52
- Produce value now at £88 of £300
- April's OPs = £206.68 - most of which were auto OPs (either by setting the repayment higher or by having an extra SO)
- Total OPs to date in this house: £18,925
- Estimated interest saved: £9,670
- Interest rate per day is depressing at £22.87 but slightly better than the £25.86 per day that we were paying in December 2024 when we remortgaged. Basically it means that the OPs I am making are only covering c. 1/3rd of the interest cost …

Fantastic savings on the interest on the mortgage..I've not worked mine out, wouldn't know how but that's definitely a good way to spur you on!

Our br@bantia touch bin lid has failed - one of springs went sproing and fell into the bin! It’s a very good age though - I think I bought it when I ran away from mad ex so that’s c. 25 years ago or so … 🤔
Tried to buy a new spring for it from their website but it’s so old that wasn’t an option. Instead I have ordered a new lid. It looks a bit shallower than the current one, but if it works and fits 🤞, that’s fine. Saves buying a whole new bin 😊

Finished my 30th book of the year. It was very bleak and very violent (set in Roman times) and featured in my dreams this morning after reading it last night. I will find something more cheerful to move onto! 😉

I have made protein savoury ‘biscuits’ aka scones 😉
They came out pretty well but need more seasonings especially salt and I think adding fried off finely chopped onion or shallot would lift them still further 😊 and maybe some fresh herbs … 🤔
It has absolutely proved the concept of using cooked red lentils in a scone mix though. Even Mr KK could handle the texture (I added some grated cheddar as well as fortified yeast to the mix) and he loathes the texture of pulses.
I also have a batch of Sousboontjie soup on the go for work lunches, which has been a LOT of work (even using precooked beans) but is a tasty looking means of eating kidney beans that I have been meaning to try for aaaages. It also means me using two new to me ingredients, namely cassia stick and tamarind paste. Just given it a stir and it smells quite promising 😊Cleaned my bedroom this morning (which also took quite a long time). It still needs tidying with stuff everywhere that I need to find homes for, so other stuff needs to leave, but at least it is a clean space I can work in now to do this sorting 😊

Hi @KajiKita @Watty1 I've tried a few yummy bean recipes from the B0ld Be@ns website lately. I'm on my own so have adapted quantities and sometimes ingredients and also used tinned or cooked dried pulses too. You can filter the recipes to the type of pulse you want to use. The majority of recipes are veggie but a few include meat or fish.
